South Indian CDP (Chef de Partie) – Job DescriptionPosition Title

Chef de Partie (CDP) – South Indian Cuisine

Department

Kitchen / Food Production

Reports To

Sous Chef / Executive Chef

Job Summary

The South Indian CDP is responsible for preparing authentic South Indian dishes while maintaining high standards of taste, presentation, hygiene, and kitchen efficiency. The role involves supervising kitchen operations within the assigned section, ensuring consistency in food quality, and supporting smooth day-to-day kitchen activities.

Key Responsibilities

Prepare and cook South Indian dishes such as dosa, idli, vada, uttapam, curries, chutneys, sambar, rasam, and regional specialties.
Ensure consistent taste, portioning, and presentation standards.
Maintain cleanliness and hygiene as per food safety standards.
Supervise and guide Commis chefs and kitchen assistants.
Monitor stock levels and assist in inventory control.
Ensure proper storage and handling of ingredients.
Coordinate with the kitchen team for smooth operations during service hours.
Assist in menu planning and development of new dishes.
Minimize food wastage and maintain cost control practices.
Follow all kitchen SOPs, safety procedures, and company policies.

Skills & Requirements

Strong knowledge of authentic South Indian cuisine.
Experience in handling live counters such as dosa or breakfast stations is preferred.
Good understanding of food hygiene and HACCP standards.
Ability to work in a fast-paced environment.
Team player with leadership and communication skills.
Flexibility to work shifts, weekends, and holidays.

Qualifications

Diploma or Certification in Hotel Management / Culinary Arts preferred.
Minimum 3–5 years of experience in South Indian kitchen operations.
Experience in hotels, resorts, restaurants, or premium cafeterias preferred.
