About the Role
Mia Cuccinna is looking for an experienced and dynamic Restaurant Manager to oversee the complete restaurant operations and deliver a premium dining experience.
The ideal candidate must have strong knowledge of food, alcoholic beverages, wines, cocktails, and food & beverage pairing. The candidate should be confident in recommending the right wine, spirit, or cocktail with different dishes and should have excellent knowledge of premium restaurant service.
Key Responsibilities
- Manage the complete day-to-day restaurant operations and ensure smooth service.
- Lead, train, motivate, and manage the FOH/service team.
- Maintain high standards of guest service, hospitality, grooming, and restaurant presentation.
- Have excellent knowledge of the complete food menu, including ingredients, preparation methods, flavours, allergens, and suitable recommendations.
- Have strong knowledge of alcoholic beverages, including whisky, vodka, gin, rum, tequila, brandy, liqueurs, beers, wines, and cocktails.
- Recommend suitable wine, cocktails, and alcoholic beverages to pair with different food dishes.
- Guide the service team on food and beverage pairing and upselling techniques.
- Ensure guests receive accurate information regarding menu items, ingredients, beverages, and recommendations.
- Handle VIP guests, special occasions, reservations, and special requests professionally.
- Resolve guest complaints and feedback quickly and professionally.
- Monitor restaurant sales, service quality, table turnover, and overall operational performance.
- Drive food and beverage sales through effective upselling and recommendations.
- Coordinate closely with the kitchen, bar, and service teams.
- Monitor food and beverage quality, portion control, presentation, and service standards.
- Manage restaurant inventory, requisitions, wastage, breakage, and operational costs.
- Ensure proper opening and closing procedures are followed.
- Prepare and review daily operational and sales reports.
- Manage staff scheduling, attendance, leave, and shift allocation.
- Ensure compliance with FSSAI, hygiene, safety, liquor regulations, and company SOPs.
- Conduct regular staff training on food knowledge, wine, cocktails, service standards, and guest handling.
- Stay updated with new food, wine, cocktail, and hospitality trends.
Food & Beverage Knowledge Required
The candidate should have strong practical knowledge of:
- Italian and international cuisine
- Food ingredients, flavours, preparation methods, and allergens
- Wine varieties and food & wine pairing
- Whisky, vodka, gin, rum, tequila, brandy, and liqueurs
- Classic and signature cocktails
- Beer and other alcoholic beverages
- Mocktails and non-alcoholic beverages
- Food & beverage pairing
- Beverage presentation and service
- Upselling of premium food and beverages
Candidate Requirements
- 5–10 years of experience in premium restaurants, hotels, lounges, or fine/lifestyle dining establishments.
- Previous experience as a Restaurant Manager / Assistant Restaurant Manager / F&B Manager preferred.
- Excellent knowledge of food, wine, spirits, cocktails, and restaurant operations.
- Strong understanding of food & wine pairing and beverage recommendations.
- Excellent leadership and team-management skills.
- Strong communication and guest-handling abilities.
- Confident, well-groomed, and professionally presented.
- Strong sales, upselling, and customer-service skills.
- Ability to manage high-volume operations and work under pressure.
- Flexible to work rotational shifts, weekends, and holidays.
- Candidates from premium restaurants, Italian restaurants, fine dining, or luxury hospitality will be preferred.
