Stay and Food
Staff accommodation and meals will be provided by Madhuban Eco Retreat, as per resort policy.
Work Base
Resort-based position. Candidate should be willing to stay at or near the resort and work during weekends, holidays and peak occupancy periods.
Role Summary
The F&B Captain will be responsible for managing dining service, supervising service staff, coordinating with the kitchen and ensuring a warm, efficient and guest-friendly food and beverage experience at Madhuban Eco Retreat. The role is important because Madhuban's guest experience depends not only on food quality but also on service style, timing, presentation, hygiene and personal attention. The Captain should be able to manage regular dining, group meals, bush dining, high tea, packed meals, special dietary requests and outdoor service when required.
Key Responsibilities Dining Operations
· Supervise breakfast, lunch, high tea, dinner and special meal service.
· Ensure dining area is clean, well-laid and ready before service.
· Allocate tables and service duties to staff.
· Ensure timely service of food and beverages.
· Coordinate with kitchen for menu, guest count and service timing.
· Handle buffet, plated service and outdoor dining arrangements.
Guest Interaction
· Welcome guests politely and understand their food preferences.
· Communicate menu details clearly.
· Handle guest requests related to spice level, dietary restrictions, Jain food, children's meals or special requirements.
· Ensure guest complaints are resolved politely or escalated to management.
Team Supervision
· Guide and supervise service staff/stewards.
· Ensure proper grooming, hygiene and discipline of service team.
· Train staff on table setup, service sequence and guest etiquette.
· Monitor staff performance during service.
Coordination with Kitchen
· Share guest count and meal timing with kitchen.
· Inform kitchen about special requests and allergies.
· Ensure food is picked up and served at the right temperature.
· Avoid delays and miscommunication between kitchen and service team.
Outdoor and Experience-Based Dining
· Support bush dining, bonfire snacks, high tea, packed breakfast and outdoor meal arrangements.
· Ensure outdoor service is clean, safe and well-presented.
· Coordinate setup, service and clearing of outdoor dining areas.
Inventory and Hygiene
· Maintain crockery, cutlery, glassware and service equipment.
· Report breakages and shortages.
· Ensure clean uniforms, clean service stations and hygienic handling of food.
· Follow food safety and cleanliness standards.
Required Skills and Attributes
· Good knowledge of restaurant and resort service.
· Ability to supervise small teams.
· Polite, confident and guest-friendly communication.
· Basic knowledge of food service, table setup and hygiene.
· Ability to coordinate with kitchen and housekeeping.
· Hindi required; English communication preferred.
Experience Required
· 3-6 years of experience in a hotel, resort, restaurant, cafe, banquet or formal hospitality setup.
· Prior experience as Senior Steward, Captain or Service Supervisor will be preferred.
· Candidate should have experience in guest service, table setup, buffet/plated service, staff supervision and coordination with kitchen.
· Experience from informal dhaba setups will not be considered relevant for this role.
Work Timing
As per meal timings and resort requirements. Split shifts may be required depending on operations.
Salary
As per experience and resort policy.
Pay: ₹20,000.00 - ₹30,000.00 per month
