Job Summary
Merlis Hotel is looking for an experienced Indian Sous Chef to lead and support our Indian kitchen operations. The ideal candidate should have strong expertise in Indian cuisine and banquet production, with the ability to maintain high standards of food quality, hygiene, and kitchen efficiency.
Responsibilities
- Prepare and supervise authentic North and South Indian cuisine.
- Manage banquet and buffet food production efficiently.
- Ensure consistency in taste, presentation, and portion control.
- Maintain food safety, hygiene, and HACCP standards.
- Assist in menu planning and recipe standardization.
- Supervise and train kitchen team members.
- Monitor inventory, minimize wastage, and control food costs.
- Coordinate with other departments to ensure smooth kitchen operations.
Requirements
- 6–10 years of experience in an Indian kitchen.
- Previous banquet (BQT) experience is mandatory.
- Experience in a 4-star or 5-star hotel is preferred.
- Strong knowledge of Indian cuisine and large-scale food production.
- Good leadership and communication skills.
- Ability to work flexible shifts.
- Knowledge of the regional language (Tamil) will be an added advantage.
