As a Commis Chef I (Indian), you will be an essential part of our kitchen team at Mewar Palace Resort, Udaipur responsible for preparing high-quality, authentic Indian dishes. Your role ensures that all food preparation aligns with our operational standards, delivering a memorable culinary experience for our guests while maintaining strict hygiene and kitchen efficiency.
Key Responsibilities:
- Prepare and cook Indian dishes according to standard recipes and hotel SOPs.
- Complete daily mise en place (preparation of ingredients) efficiently before service begins.
- Maintain strict food safety, hygiene, and kitchen sanitation standards at all times.
- Ensure accurate portion control to minimize food wastage and maintain cost efficiency.
- Keep the kitchen, cooking stations, and equipment clean, organized, and properly sanitized.
- Support senior chefs (Chef de Partie, Sous Chef) in daily culinary operations and special preparations.
- Monitor food stock levels, conduct basic inventory checks, and assist in generating requisition lists.
- Coordinate effectively with the F&B Service team to ensure timely order dispatch.
- Maintain proper grooming, professional conduct, and a safe working environment.
- Maintain necessary kitchen logs, temperature records, and reports wherever applicable.
Required Skills:
- Strong knowledge of Indian cuisine (curries, tandoor, and regional dishes).
- Basic food preparation and advanced knife skills.
- Understanding of mise en place and kitchen organization.
- Familiarity with food safety, HACCP, and hygiene standards.
- Ability to operate basic commercial kitchen equipment safely.
- Portion control and waste management.
- Time management during peak service hours.
Experience:
3 – 5 years of experience in a hotel kitchen or reputed restaurant, specifically in Indian cuisine. Candidates with relevant practical experience will be strongly considered.
Educational Qualification:
Diploma or Degree in Culinary Arts, Food Production, or Hotel Management is preferred. Candidates with strong practical experience and a proven track record without formal degrees are also encouraged to apply.
