Job Summary
We are seeking a skilled and passionate South Indian Chef to join our kitchen team and deliver authentic, high-quality South Indian cuisine. The ideal candidate will have deep knowledge of traditional recipes, spices, and cooking techniques, along with the ability to maintain consistency, hygiene, and efficiency in a fast-paced kitchen environment.
The South Indian Chef will be responsible for preparing a wide variety of dishes such as dosas, idlis, vadas, sambars, chutneys, and regional specialties, including expertise in preparing Benne Dosa (Butter Dosa)—a signature dish known for its crisp texture and rich flavor. The candidate must ensure excellent taste, presentation, and quality standards in all preparations.
Key Responsibilities
- Prepare and oversee authentic South Indian dishes including dosa, idli, vada, uttapam, sambar, rasam, and chutneys
- Specialize in preparing Benne Dosa (Butter Dosa) with proper texture, fermentation, and butter usage
- Ensure consistency in taste, quality, and presentation of all dishes
- Manage dosa tawa, idli steamer, and other specialized kitchen equipment efficiently
- Assist in menu planning, recipe development, and introducing new regional dishes
- Maintain cleanliness and organization of kitchen workstations
- Ensure strict adherence to health, safety, and food hygiene standards
- Prepare, cook, and present high-quality dishes within the specialty section
- Monitor portion control and minimize food wastage
- Handle preparation of batters, spice mixes, and ingredients in advance
- Ensure proper fermentation and storage of dosa/idli batter
- Train and guide Commis Chefs and junior kitchen staff
- Monitor inventory levels and assist in stock control
- Ensure smooth kitchen operations during peak service hours
- Maintain proper storage of ingredients as per food safety standards
- Coordinate with management for menu planning and special orders
- Provide support and service to staff and customers when required
Requirements
- Proven experience as a South Indian Chef or similar role
- Strong expertise in South Indian cuisine and traditional cooking techniques
- Hands-on experience in dosa section, especially Benne Dosa preparation
- Ability to work efficiently in a fast-paced kitchen environment
- Good teamwork and communication skills
- Sound knowledge of food safety and hygiene practices
- Culinary degree or equivalent experience preferred
Knowledge & Expertise
- Knowledge of Firefighting and Fire Safety procedures
- Strong understanding of HACCP (Hazard Analysis and Critical Control Points)
- Expertise in batter fermentation and traditional cooking methods
- Special knowledge of Benne Dosa batter consistency and cooking technique
- Knowledge of inventory management and cost control
- Experience in bulk cooking and catering operations
- Ability to manage kitchen equipment and maintenance
