Position Summary
The General Manager is responsible for leading the overall operations of Pentoz Restaurant & Café. This includes delivering exceptional guest experiences, driving revenue growth, maintaining high food and beverage standards, developing employees, managing costs, and ensuring operational excellence.
The General Manager is expected to build Pentoz into one of Ooty’s most preferred café and restaurant destinations.
Key Responsibilities
1. Business Operations
- Manage all day-to-day restaurant and café operations.
- Ensure smooth coordination between the kitchen, café, service, cashier, housekeeping, and purchasing teams.
- Ensure SOPs are followed across all departments.
- Maintain excellent service standards at all times.
2. Guest Experience
- Deliver exceptional customer service.
- Personally interact with guests during peak hours.
- Resolve guest complaints promptly and professionally.
- Maintain a guest satisfaction score of at least 95%.
- Increase repeat customer visits.
3. Revenue Growth
- Achieve daily, weekly, and monthly sales targets.
- Increase average bill value through upselling.
- Improve table turnover without compromising service quality.
- Work with the marketing team to increase footfall and online visibility.
4. Team Leadership
- Recruit, train, motivate, and retain employees.
- Conduct daily pre-shift briefings.
- Assign duties and monitor performance.
- Build a culture of accountability, teamwork, and continuous improvement.
- Coach department heads and supervisors.
5. Food & Beverage Quality
- Ensure consistency in food quality, taste, presentation, and portion sizes.
- Work closely with the Head Chef to develop seasonal menus and signature dishes.
- Monitor customer feedback and implement improvements.
6. Financial Management
- Monitor daily sales and expenses.
- Control labour costs and food costs.
- Approve purchases within delegated authority.
- Reduce wastage and improve operational efficiency.
- Prepare daily and monthly performance reports.
7. Inventory & Procurement
- Oversee stock management.
- Conduct regular inventory audits.
- Ensure proper storage and stock rotation.
- Prevent shortages, pilferage, and overstocking.
8. Hygiene & Safety
- Ensure compliance with FSSAI and health regulations.
- Maintain high standards of cleanliness throughout the restaurant and café.
- Conduct regular hygiene inspections.
- Ensure all safety procedures are followed.
9. Brand Development
- Maintain Pentoz brand standards.
- Ensure consistent ambience, music, lighting, and presentation.
- Encourage guest engagement and social media visibility.
- Support promotional campaigns and local partnerships.
Daily Responsibilities
- Conduct morning operations briefing.
- Review reservations and expected guest count.
- Inspect dining areas, café, and kitchen before opening.
- Monitor food quality and service during peak hours.
- Handle VIP guests and customer concerns.
- Review inventory and purchasing requirements.
- Approve shift schedules.
- Prepare end-of-day operational report.

Qualifications
Education
- Degree or Diploma in Hotel Management, Hospitality Management, or Business Administration preferred.
Experience
- Minimum 5 years of restaurant, café, or hotel operations experience.
- At least 2 years in a leadership role.
- Experience managing premium dining or café operations is preferred.
