We are looking for a detail-oriented and analytical F&B Controller to oversee food and beverage cost control, inventory management, purchasing controls, and financial reporting across our F&B operations.
The role will be responsible for monitoring the complete F&B cost cycle—from procurement and receiving to storage, production, consumption and sales—while identifying variances, reducing wastage and improving overall profitability.
Key Responsibilities:
1. F&B Cost Control
- Monitor and control food, beverage and consumable costs across all outlets.
- Calculate and monitor Food Cost %, Beverage Cost %, COGS and gross margins.
- Analyse actual cost against theoretical/budgeted cost and investigate variances.
- Identify areas of excessive consumption, wastage, pilferage and leakage.
- Recommend corrective actions to improve cost efficiency.
2. Recipe Costing & Menu Analysis
- Prepare and maintain standard recipe cards and recipe costing.
- Calculate ingredient cost, yield, portion cost and contribution margin for menu items.
- Review recipe costing whenever supplier prices or ingredient costs change.
- Support menu pricing and menu engineering based on profitability.
- Monitor portion control and standardization across outlets.
3. Inventory & Stock Control
- Monitor inventory levels and stock movement across kitchens, stores and outlets.
- Conduct daily, weekly and monthly stock verification as required.
- Reconcile physical stock with system stock and investigate discrepancies.
- Monitor minimum/maximum stock levels and par stock requirements.
- Ensure proper FIFO/FEFO practices and minimize expired, slow-moving and obsolete stock.
- Monitor wastage, spoilage, breakage and stock losses.
4. Purchase & Receiving Control
- Verify purchase orders, invoices, GRNs and supplier rates.
- Compare purchase prices with approved quotations and agreed vendor rates.
- Coordinate with Purchase, Stores, Chefs and Operations teams to control procurement costs.
- Verify quantity and quality of goods received.
- Identify price variations and recommend cost-saving opportunities.
5. POS & Sales Reconciliation
- Review daily F&B sales reports generated through POS systems.
- Reconcile POS sales with KOTs, invoices, inventory consumption and accounting records.
- Monitor complimentary sales, discounts, voids, cancellations and non-chargeable items.
- Investigate unusual sales or consumption variances.
- Ensure correct menu pricing and authorized price changes in the POS system.
6. MIS & Reporting
- Prepare daily, weekly and monthly F&B cost reports.
- Prepare variance analysis covering food cost, beverage cost, inventory and wastage.
- Prepare outlet-wise profitability and cost analysis.
- Track consumption trends and identify unusual movements.
- Submit regular reports and actionable recommendations to management.
- Assist Finance in month-end closing and inventory reconciliation.
7. Audit & Internal Controls
- Conduct regular and surprise stock audits.
- Monitor compliance with F&B purchasing, receiving, issuing and storage procedures.
- Identify potential leakage, pilferage and unauthorized consumption.
- Ensure proper documentation for all stock movements.
- Support internal and external audit requirements.
- Recommend improvements to F&B control procedures and SOPs.
8. Coordination with Operations
- Work closely with Chefs, F&B Managers, Purchase, Stores and Finance teams.
- Conduct regular discussions on food cost, wastage and inventory variances.
- Support management in improving outlet-level profitability.
- Provide financial and operational insights for business decisions.
Pay: Up to ₹60,000.00 per month
