Job Description:
We are looking for an experienced and skilled Head Chef – Vegetarian Maharashtrian Cuisine to lead our kitchen team in Kalyan. The candidate should have strong hands-on experience in authentic Maharashtrian vegetarian cuisine, kitchen management, menu planning, bulk preparation, team handling, quality control, portion control, and food cost management.
The ideal candidate should be confident in managing complete kitchen operations independently and should have deep knowledge of traditional Maharashtrian food, thalis, snacks, breakfast items, festive dishes, regional preparations, and local flavour profiles.
Key Responsibilities:
- Lead and manage complete kitchen operations for vegetarian Maharashtrian cuisine.
- Prepare and supervise authentic Maharashtrian dishes such as misal, usal, poha, sabudana khichdi, pithla bhakri, zunka, bharli vangi, varan bhaat, amti, batata bhaji, kothimbir vadi, thali items, snacks, breakfast items, and festive dishes.
- Plan daily production, mise-en-place, section allocation, prep sheets, and service readiness.
- Maintain consistency in taste, quality, portion size, plating, and presentation.
- Supervise CDPs, Commis, helpers, and kitchen support staff.
- Train kitchen team on recipes, hygiene, portioning, preparation methods, and service standards.
- Manage vegetarian kitchen production for daily service, rush hours, thali service, bulk orders, and catering requirements if needed.
- Monitor raw material quality, wastage, storage, FIFO, labelling, and stock rotation.
- Coordinate with management for menu planning, recipe standardization, costing, vendor requirements, and procurement planning.
- Maintain food cost controls, portion control, wastage control, and kitchen efficiency.
- Ensure hygiene, cleanliness, grooming, food safety standards, and kitchen SOPs are followed at all times.
- Check kitchen equipment, storage areas, refrigerators, cooking sections, and cleaning schedules regularly.
- Report shortages, spoilage, staff issues, equipment issues, and operational updates to management.
- Ensure smooth coordination between kitchen, service team, and management during operations.
Candidate Requirements:
- Prior experience as Head Chef, Sous Chef, Executive Chef, Senior CDP, or Maharashtrian Cuisine Chef in a restaurant, hotel, catering setup, thali restaurant, or cloud kitchen.
- Strong practical knowledge of vegetarian Maharashtrian cuisine is required.
- Should be able to lead a kitchen team and manage complete operations independently.
- Knowledge of thali service, snacks, breakfast items, gravies, rice items, bulk preparation, and festive menus will be preferred.
- Should have basic knowledge of menu planning, recipe standardization, food costing, portion control, and inventory coordination.
- Must be clean, disciplined, punctual, team-oriented, and quality-focused.
- Should be comfortable working during weekends, public holidays, and busy service hours.
- Candidate should be currently located in or willing to travel/relocate to Kalyan.
Qualification:
Minimum 10th / 12th pass.
Hotel management or culinary background will be preferred but is not mandatory.
