Hotel Beach Garden is a well-established boutique hotel in the heart of Juhu located opposite the iconic Juhu Beach catering to families, business and leisure guests.
Job Summary:
We are looking for a Kitchen Supervisor to oversee and coordinate the day-to-day functioning of the kitchen. The person is responsible for supervising kitchen staff, ensuring hygiene and cleanliness while monitoring food quality as per FSSAI standards, coordinating with the F&B team, managing kitchen supplies, controlling wastage, and ensuring compliance with hotel policies and SOPs.
Hands-on cooking experience is not mandatory. We are looking for a responsible and organised individual with good supervisory and team coordination skills.
Key Responsibilities:
1) Kitchen Operations
- Supervise the daily functioning of the kitchen and ensure smooth operations.
- Allocate duties and coordinate with chefs, cooks, kitchen helpers, and other kitchen staff.
- Monitor staff attendance, grooming, discipline, and performance.
- Ensure the kitchen team follows daily work schedules and operational requirements.
- Coordinate with the F&B/Restaurant team to ensure timely food service.
- Monitor breakfast, restaurant, and room-service requirements and ensure timely coordination with the kitchen team.
- Ensure proper handover between shifts.
2) Food Quality & Service
- Monitor food preparation and ensure consistency in quality, taste, portion size, and presentation.
- Ensure food orders are prepared and dispatched on time.
- Monitor portion control and help minimise unnecessary food wastage.
- Coordinate with the Chef regarding any food-quality or operational issues.
- Ensure guest complaints relating to food or kitchen operations are promptly communicated and addressed.
3) Hygiene & Cleanliness
- Maintain high standards of kitchen cleanliness and hygiene as per FSSAI checklist.
- Ensure kitchen staff follow personal hygiene and grooming standards.
- Monitor cleanliness of kitchen work areas, utensils, refrigerators, freezers, storage areas, and equipment.
- Ensure proper food storage, labelling, date marking, and stock rotation.
- Ensure FIFO/FEFO practices are followed.
- Monitor compliance with food-safety and sanitation requirements.
4) Inventory & Stores Coordination
- Monitor daily requirements of kitchen ingredients and supplies.
- Coordinate with the Stores/Purchase team for timely availability of required materials.
- Monitor stock levels and report shortages or excessive stock to the concerned person.
- Ensure proper storage and handling of food materials.
- Monitor wastage and assist in maintaining effective cost control.
- Ensure proper requisition and issue procedures are followed.
5) Staff Supervision
- Supervise and guide kitchen staff in their daily duties.
- Ensure discipline, punctuality, teamwork, and professional conduct.
- Assist in training staff on hygiene, cleanliness, safety, and hotel SOPs.
- Identify operational or staffing issues and report them to the Chef/Management.
- Support the kitchen team during busy operating periods when required.
6) Safety & Equipment
- Ensure kitchen equipment is used safely and appropriately.
- Monitor cleanliness and basic upkeep of kitchen equipment.
- Report equipment breakdowns and maintenance requirements promptly.
- Ensure compliance with fire, gas, electrical, and workplace safety procedures.
- Immediately report any safety or hygiene concerns to management.
- Candidate Profile:
- 2–5 years of experience in a Supervisory/coordination role, preferably in a hotel, restaurant, hospitality, or food-service environment.
- Hands-on cooking experience is not mandatory.
- Candidates with experience in hotel operations, F&B coordination, restaurant supervision, or other relevant supervisory roles may be considered.
- Good communication and interpersonal skills.
- Strong organisational and team-management abilities.
- Ability to supervise staff and coordinate effectively with different departments.
- Good understanding of cleanliness, hygiene, food safety, and workplace safety.
- Basic knowledge of inventory and stock control.
- Responsible, disciplined, and proactive approach to work.
- Willingness to work in rotational shifts, weekends, and holidays as required.
Important Note:
This is a supervisory position. Hands-on cooking experience is not necessary.
Pay: ₹25,000.00 - ₹35,000.00 per month
