Role Summary
The Food Court Manager is responsible for the overall operations, maintenance, hygiene, compliance, and customer experience of the mall's food court. The role ensures smooth day-to-day functioning of all food outlets, adherence to operational standards, statutory compliance, cleanliness, and efficient coordination with tenants and internal departments to deliver a safe, hygienic, and pleasant dining environment.
Key Responsibilities
Food Court Operations
- Ensure timely opening and closing of all food outlets as per mall operating hours.
- Monitor the daily functioning of the entire food court to ensure seamless operations.
- Coordinate with food outlet partners for uninterrupted business operations.
- Conduct regular operational rounds to identify and resolve issues proactively.
Contract Manpower Management
- Manage housekeeping, utility, and other contract manpower deployed in the food court.
- Prepare and monitor duty rosters, attendance, deployment, and shift scheduling.
- Ensure optimum manpower utilization and productivity.
- Coordinate with manpower agencies for replacements, absenteeism, and performance-related issues.
- Train and monitor contract staff on grooming, hygiene, customer service, and operational SOPs.
- Ensure contract staff adhere to safety protocols and mall operational standards.
Hygiene & Cleanliness Management
- Ensure the highest standards of cleanliness and housekeeping across the food court.
- Conduct regular kitchen hygiene audits for all food outlets.
- Monitor cleaning schedules for dining areas, common spaces, wash stations, and service areas.
- Ensure compliance with food safety and sanitation standards.
Dry Store & Inventory Audit
- Conduct periodic dry store audits to verify hygiene, storage practices, and stock management.
- Ensure proper storage conditions and adherence to food safety guidelines.
Tenant Compliance Management
- Ensure all food outlets comply with the terms of their lease agreement and mall SOPs.
- Monitor:
- Approved menu display
- Pricing compliance
- Billing systems
- KOT (Kitchen Order Ticket) process
- Food hygiene standards
- Uniform and grooming standards
- Customer service protocols
- Maintain compliance reports and initiate corrective actions where required.
Customer Experience
- Handle customer complaints and escalations promptly and professionally.
- Coordinate with outlet partners to resolve customer issues within defined timelines.
- Monitor customer feedback and implement service improvement initiatives.
Pest Control Management
- Coordinate periodic pest control activities across the food court.
- Ensure all outlets comply with pest management schedules and preventive measures.
- Maintain pest control records and follow-up reports.
Waste Management
- Ensure proper waste segregation at source.
- Monitor garbage collection, disposal, and housekeeping practices.
- Ensure compliance with environmental and municipal waste management guidelines.
Safety & Compliance
- Ensure compliance with Food Safety, Fire Safety, Health & Safety, and Mall SOPs.
- Conduct periodic inspections to identify operational and safety risks.
- Coordinate with engineering, housekeeping, security, and facility management teams for issue resolution.
Reporting & Documentation
- Prepare daily, weekly, and monthly operational reports.
- Maintain audit records, compliance checklists, complaint registers, and inspection reports.
- Track outlet performance and follow up on corrective actions.
Qualifications
- Bachelor's degree in Hotel Management, Hospitality Management, Business Administration, or a related field.
Experience
- 5–8 years of experience in Food Court Operations, Mall Operations, Hospitality, QSR, Retail Food Chains, or Facility Management.
- Experience managing multiple food brands or food court operations will be preferred.
Pay: ₹20,000.00 - ₹25,000.00 per month
