Experience: 2–4 years in a professional chocolate/pastry kitchen
About the Role
We are looking for a skilled and experienced Chef de Partie – Chocolate to join our Chocolate Department. The candidate will be responsible for independently managing the chocolate section, ensuring smooth daily production, consistent quality, and adherence to recipes, hygiene standards, and production timelines.
Key Responsibilities
- Take complete responsibility for the Chocolate Section and its day-to-day operations.
- Execute chocolate production including tempering, moulding, dipping, coating, filling, decorating, and finishing.
- Prepare ganaches, pralines, caramels, giandujas, fillings, and other chocolate components.
- Follow and maintain standard recipes, production sheets, and SOPs.
- Ensure consistency in taste, texture, weight, finish, and presentation.
- Plan and execute daily production according to the production schedule.
- Coordinate with the Sous Chef / Pastry Chef and Operations team regarding production requirements.
- Monitor raw material usage and communicate inventory requirements to the concerned team.
- Ensure minimum wastage and proper utilisation of chocolate and other ingredients.
- Maintain proper tempering temperatures and storage conditions.
- Conduct quality checks throughout the production process.
- Maintain high standards of hygiene, sanitation, and food safety.
- Ensure all equipment and workstations are cleaned and maintained properly.
- Train and guide Commis and junior team members working in the chocolate section.
- Assist in developing and testing new chocolate products and seasonal collections.
- Execute customised orders for luxury gifting, weddings, corporate clients, and events.
- Maintain accurate production records and report any discrepancies or quality issues.
- Ensure all production is completed within the required timelines without compromising quality.
Required Skills & Qualifications
- 2–4 years of professional experience in chocolate production or a pastry/chocolate kitchen.
- Strong technical knowledge of chocolate tempering and handling.
- Knowledge of pralines, ganaches, moulded chocolates, enrobed chocolates, and chocolate decorations.
- Ability to independently manage a chocolate section.
- Strong attention to detail and presentation.
- Good understanding of food safety and hygiene standards.
- Ability to manage production deadlines and high-volume requirements.
- Leadership skills to guide Commis and junior team members.
- Good communication and teamwork.
- Passion for working with premium and luxury chocolate products.

- Correct tempering and finishing of all chocolate products.

Ideal Candidate
The ideal candidate is a technically strong, hands-on chocolate professional who can independently manage a section, lead junior team members, maintain luxury-level finishing standards, and perform efficiently in a fast-paced production environment.
Pay: ₹30,000.00 - ₹40,000.00 per month
