A Chole Bhature Chef (or specialized cook) manages the entire preparation process, from dough fermentation to the final spice blend. Responsibilities include perfecting the texture of the chickpea curry, rolling and frying puffed bhaturas, and ensuring all food safety protocols are met.
Key Daily Duties
- Dough Preparation: Mix, knead, and ferment the maida (all-purpose flour) dough, ensuring the perfect consistency and resting time for fluffy bhaturas.
- Chole Cooking: Slow-cook chickpeas with exact spice blends, tea decoctions (for dark color), and aromatics, ensuring the gravy achieves a rich, traditional street-style consistency.
- Frying: Heat oil to the correct temperature to deep-fry bhaturas instantly so they puff up perfectly without soaking up excess oil.
- Garnish & Presentation: Plate the dishes with essential accompaniments like sliced onions (pyaaz), lemon wedges, and green mint/tamarind chutney.
Kitchen Management & Operations
- Inventory Control: Inspect raw ingredients (chickpeas, flour, spices), check for freshness, and discard expired items.
- Station Setup: Prepare the kitchen station by organizing cooking utensils, spice bins (masala dabba), and pre-heating deep-frying equipment.
- Hygiene & Safety: Maintain strict food hygiene, ensure sanitary work areas, and adhere to local food safety regulations.
- Recipe Consistency: Ensure standardized recipes are followed so that the taste, spice levels, and textures remain uniform for every customer.
