Position Title:
General Manager – Restaurants

Group CEO / COO – Club Oxygen
Location:
Based at Corporate Office with frequent travel across restaurant locations.
Role Summary
The General Manager – Restaurants will be responsible for end-to-end operational, financial, customer experience, compliance, expansion, and profitability management of multiple restaurant outlets under the Group. The role requires strong leadership in driving sales growth, operational excellence, cost optimization, SOP implementation, team productivity, and customer satisfaction across all units.
Key Responsibilities
1. Multi-Unit Restaurant Operations
- Manage and oversee operations of multiple restaurant outlets.
- Ensure smooth daily functioning of all restaurant units.
- Monitor outlet-wise sales, profitability, customer feedback, and operational standards.
- Drive operational consistency across all locations.
2. Revenue & Profitability Management
- Achieve monthly and annual sales targets.
- Improve outlet-wise EBITDA and profitability.
- Monitor:
- Food Cost %
- Beverage Cost %
- Labour Cost %
- Utility Cost %
- Wastage %
- GP Margins
- Implement strategies to improve table turnover and average billing value.
3. SOP & Process Implementation
- Standardize operational SOPs across all restaurants.
- Ensure adherence to:
- Kitchen SOPs
- Service SOPs
- Billing Procedures
- Inventory Controls
- Hygiene & Grooming Standards
- Conduct periodic operational audits.
4. Team Leadership & HR Management
- Lead Restaurant Managers, Kitchen Heads, Service Teams, and Support Functions.
- Drive manpower planning and productivity.
- Conduct training programs for:
- Customer service
- Upselling
- Hygiene standards
- Grooming standards
- Operational discipline
- Reduce staff attrition and improve engagement.
5. Customer Experience Management
- Ensure superior guest experience across all outlets.
- Monitor online reviews and customer feedback.
- Resolve escalations and customer complaints promptly.
- Drive repeat customer programs and loyalty initiatives.
6. Inventory & Cost Control
- Implement strict controls on:
- Inventory
- Pilferage
- Wastage
- Stock variances
- Ensure proper stock reconciliation and consumption tracking.
- Coordinate with procurement for optimized purchasing.
7. Compliance & Governance
- Ensure compliance with:
- FSSAI
- Trade License
- Fire & Safety
- Labour Laws
- GST & Statutory Requirements
- Ensure all outlets maintain hygiene and safety standards.
8. Business Expansion & New Openings
- Support new restaurant launches and expansion projects.
- Coordinate:
- Vendor finalization
- Pre-opening setup
- Recruitment
- Training
- SOP rollout
- Drive successful opening and stabilization of new outlets.
9. Reporting & MIS
- Submit weekly and monthly MIS reports covering:
- Sales
- Profitability
- Footfalls
- Customer feedback
- Wastage analysis
- Outlet performance
- Present action plans for underperforming outlets.

Desired Candidate Profile
- Graduate / Hotel Management / MBA preferred.
- 10–15+ years experience in restaurant or hospitality operations.
- Minimum 5 years experience handling multiple restaurant outlets.
- Strong exposure to:
- QSR
- Casual Dining
- Pub / Lounge / Hospitality Operations
- Strong commercial and operational acumen.
- Excellent leadership, negotiation, and analytical skills.
- Ability to handle high-pressure operational environments.
- Experience from reputed restaurant chains, hospitality groups, pubs, lounges, café chains, or food retail brands will be preferred.
