We are seeking a passionate and skilled Pizza Maker (Commis II / III) to join our culinary team. The ideal candidate should have hands-on experience in preparing a variety of pizzas including Neapolitan (Napoli), Detroit-style, American, New York-style, gourmet, and artisanal pizzas. The candidate should be capable of working in a fast-paced kitchen environment while maintaining consistency, quality, and hygiene standards.
Key Responsibilities
Prepare and stretch dough for multiple pizza styles including Napoli/Neapolitan, Detroit, American, thin crust, and specialty pizzas.
Operate and manage wood-fired, deck, stone, or conveyor ovens while maintaining proper baking temperatures.
Prepare sauces, cheeses, toppings, and mise-en-place as per standardized recipes.
Ensure consistency in taste, texture, presentation, and portioning of pizzas.
Monitor fermentation, proofing, hydration, and dough quality for different pizza styles.
Assist in menu innovation and seasonal pizza specials.
Maintain cleanliness and organization of the pizza station and kitchen area.
Follow food safety, HACCP, hygiene, and sanitation standards at all times.
Minimize food wastage and ensure proper storage of ingredients.
Coordinate with kitchen staff to ensure timely order preparation during peak service hours. Standard pizza-maker roles often include prep, oven management, and maintaining workstation hygiene.
Requirements
For Commis III
1–2 years of experience in pizza making or bakery/hot kitchen.
Basic understanding of pizza dough preparation and baking techniques.
Passion for authentic and modern pizza styles.
For Commis II
2–4 years of experience in professional pizza kitchens.
Strong hands-on expertise in Napoli, Detroit, American, and artisanal pizza-making techniques.
Experience with dough fermentation, hydration control, and oven operations.
Ability to work independently during busy service hours.
