The Commis 2 at Olegio is a skilled kitchen professional with proven expertise in Continental cuisine. This role is pivotal in executing restaurant standards while supporting the Chef de Partie in maintaining operational excellence, food quality, and safety compliance. The ideal candidate brings solid foundational knowledge, attention to detail, and a passion for culinary excellence.
Key Responsibilities
- Prepare, cook, and plate Continental dishes with precision and consistency according to established recipes and techniques
- Manage station mise-en-place and maintain cleanliness and organization throughout service
- Support the Chef de Partie in menu planning, recipe development, and kitchen standard maintenance
- Monitor food costs and minimize waste by efficient use of ingredients and proper portioning
- Train and mentor junior kitchen staff (Commis 3) on techniques, safety, and procedural protocols
- Maintain strict adherence to food safety standards, HACCP protocols, and kitchen hygiene regulations
- Collaborate with other stations to ensure timely and accurate order execution during service
- Troubleshoot minor equipment issues and report maintenance needs to management
- Handle rush periods with composure, prioritizing order accuracy and presentation quality
- Assist with inventory management and stock rotation
Required Qualifications
- 3–5 years of kitchen experience in a fine dining or upscale restaurant setting
- Proven expertise in Continental/European cuisine preparation and plating
- Strong knowledge of classical cooking techniques (sautéing, braising, poaching, etc.)
- Proficiency with kitchen equipment and tools
- Certification in Food Safety/HACCP or equivalent
- Excellent knife skills and plating precision
- Ability to read and interpret menu specifications and restaurant standards
- Knowledge of inventory systems and cost control principles

- Strong leadership and mentoring abilities
- Culinary training or certification from recognized institution
- Experience with specialty dietary requirements or international cuisine variations
- Fluency in English; regional language knowledge is an advantage
