The DCDP/CDP – Goan Cuisine is responsible for the preparation, cooking, and presentation of authentic Goan dishes while maintaining the highest standards of quality, hygiene, and consistency. The role involves managing the Goan cuisine section, supervising junior kitchen staff, ensuring proper mise en place, and contributing to menu development.
Responsibilities:
- Prepare and cook authentic Goan vegetarian and non-vegetarian dishes.
- Ensure consistency in taste, texture, presentation, and portion sizes.
- Ensure all dishes are prepared according to approved recipes and standards.
- Manage the Goan cuisine section during service.
- Coordinate with Sous Chef and Executive Chef for daily production requirements.
Requirements:
- Diploma/Degree in Hotel Management or Culinary Arts preferred.
- Proven experience as a DCDP, Commis Chef, or in a similar culinary role in a reputable establishment.
- Minimum 3–5 years' experience as DCDP/CDP in Goan Cuisine.
- Strong knowledge of traditional Goan cuisine, seafood preparation, local spices, and regional cooking techniques.
- Ability to work under pressure in a fast-paced kitchen environment.
