Job Description: Commis 2 – Modern Fine Dining The Commis 2 in our modern ## Key Responsibilities## Avant-Garde Mise-en-Place & Technique * Execute precise knife work to meet strict aesthetic standards for geometric cuts, garnishes, and textures. * Assist in preparing complex components including emulsions, gels, foams, infusions, and artisanal oils. * Operate specialized modern kitchen equipment such as sous-vide thermal circulators, chamber vacuum sealers, and whipping siphons. * Portion premium, high-cost ingredients with absolute accuracy to minimize waste and maintain cost control. ## Station Support & Plating Artistry * Set up assigned stations with exact components required for intricate, multi-course tasting menus. * Assist senior chefs during high-pressure service times with components requiring delicate handling. * Master the exact placement of micro-greens, edible flowers, and precise sauce drizzles during final plating. * Maintain flavor consistency by strictly following standardized recipes and tasting components regularly. ## Kitchen Integrity & Food Safety * Maintain an immaculate, organized, and sanitary workstation reflective of a luxury kitchen environment. * Label, date, and vacuum-pack components according to strict HACCP guidelines and shelf-life protocols. * Clean and calibrate delicate culinary tools, precision scales, and specialized modern equipment daily. * Follow the FIFO (First In, First Out) system to manage highly perishable, artisanal, and seasonal inventory. ## Skills & Competencies * Precision: Exceptional hand-eye coordination for intricate plating and exact ingredient measurements. * Modern Culinary Knowledge: Familiarity with low-temperature cooking, hydrocolloids, and contemporary flavor pairings. * Adaptability: Ability to remain calm, focused, and receptive to feedback in a fast-paced, high-standard environment. * Palate Development: A refined sense of taste and smell to ensure consistent component execution. ## Qualifications & Requirements * Experience: Minimum 1–2 years of experience in a fine dining, luxury hotel, or upscale contemporary kitchen. * Education: Degree or diploma from a recognized Culinary Arts institution is highly preferred. * Certifications: Valid local Food Handler's License or food safety certification. * Stamina: Ability to maintain intense focus and physical endurance during service
