Sous Chef – South Indian Cuisine

Job Summary:
We are looking for a passionate and experienced Sous Chef specializing in South Indian cuisine to join our upcoming Malgudi Restaurant. The ideal candidate should have strong expertise in authentic regional South Indian dishes and the ability to support kitchen operations, maintain quality standards, and lead a team effectively.
Key Responsibilities:
- Assist the Head Chef in managing daily kitchen operations
- Prepare and supervise authentic South Indian dishes (Tamil, Kerala, Karnataka, Andhra cuisines)
- Ensure consistency in taste, presentation, and portioning
- Maintain high standards of hygiene and food safety (FSSAI compliance)
- Train and mentor junior kitchen staff (CDPs, Commis)
- Monitor inventory, food cost, and wastage control
- Ensure smooth coordination between kitchen and service team
- Maintain SOPs and standard recipes as per brand guidelines
- Support in menu planning and new dish development
Key Requirements:
- 4–8 years of experience in South Indian cuisine
- Prior experience as Sous Chef / Sr. CDP in a reputed restaurant or QSR
- Strong knowledge of traditional and modern South Indian cooking techniques
- Experience in high-volume kitchen operations preferred
- Good leadership and team management skills
- Ability to work under pressure and in a fast-paced environment
- Culinary degree/diploma preferred
Preferred Background:
- Experience working with brands like Saravana Bhavan, A2B, Sagar Ratna, Rameshwaram Café, or similar South Indian concepts
- Expertise in dishes like Dosa, Idli, Vada, Appam, Chettinad, Kerala curries, Andhra spices, etc.
Compensation:
