Job Overview
Evara is looking for a skilled and passionate South Indian Chef specializing in authentic Mangalorean and coastal cuisine. The ideal candidate should have strong experience in preparing traditional dishes with consistency, flavor balance, hygiene, and fine-dining presentation standards.
Key Responsibilities
- Prepare authentic Mangalorean and South Indian dishes with consistency and quality
- Expertly cook dishes such as:
- Kori Rotti
- Neer Dosa
- Appam
- Chicken Ghee Roast
- Puli Munchi
- Coastal fish curries and fried fish preparations
- Traditional gravies, chutneys, and masalas
- Handle seafood cleaning, marination, and preparation efficiently
- Maintain taste consistency and portion control
- Ensure kitchen hygiene and food safety standards are followed at all times
- Assist in menu development and seasonal specials
- Coordinate with kitchen staff for smooth kitchen operations during service
- Monitor stock, storage, and freshness of ingredients
Requirements
- Minimum 3–5 years of experience in South Indian or Mangalorean cuisine
- Strong knowledge of coastal Karnataka flavors, spices, and cooking techniques
- Experience in restaurant or fine-dining kitchens preferred
- Ability to work efficiently during busy service hours
- Knowledge of seafood preparation is mandatory
- Team-oriented and disciplined work ethic
