About the Role
We are looking for a passionate and skilled DCDP – Pastry & Breads to join our culinary team. The ideal candidate should have hands-on experience in preparing premium desserts, artisanal breads, viennoiserie, and baked products while maintaining the highest standards of quality, hygiene, and consistency.
Key Responsibilities:
- Prepare and bake a variety of breads, buns, croissants, brioche, focaccia, sourdough, and other bakery products.
- Prepare cakes, pastries, tarts, cookies, muffins, brownies, and plated desserts as per standard recipes.
- Ensure consistency in taste, texture, presentation, and portioning.
- Assist the Pastry Chef/CDP in daily kitchen operations and production planning.
- Maintain mise en place and ensure timely production for service.
- Monitor inventory and communicate ingredient requirements to minimize shortages and wastage.
- Follow standardized recipes and food cost guidelines.
- Maintain cleanliness and organization of the pastry and bakery section.
- Ensure compliance with food safety, hygiene, and sanitation standards.
- Properly store ingredients and finished products following FIFO and FEFO practices.
- Assist in new dessert and bakery product development.
- Coordinate effectively with kitchen and service teams to ensure smooth operations.
Required Skills:
- Strong knowledge of baking techniques and pastry production.
- Experience in bread fermentation, dough handling, and baking processes.
- Knowledge of chocolate work, creams, fillings, and dessert plating.
- Understanding of bakery equipment, mixers, proofers, ovens, and refrigeration.
- Basic knowledge of inventory control and food costing.
- Ability to work efficiently under pressure in a fast-paced environment.
- Good communication and teamwork skills.
- Passion for innovation and attention to detail.
Qualifications:
- Diploma or Degree in Hotel Management, Bakery, or Culinary Arts preferred.
- 2–4 years of relevant experience in pastry and bakery production.
- Experience in premium cafés, luxury hotels, or fine dining restaurants will be preferred.
