Madras Square is a well respected restaurant, now scaling up and opening a Asian fine dining restaurant. We are seeking a passionate and experienced Executive Chef to lead our kitchen operations, drive culinary excellence, and contribute to the growth of our brand.
Position Summary
The Executive Chef will oversee all kitchen operations, ensuring consistency, quality, profitability, and team development. The ideal candidate will possess strong leadership skills, excellent financial acumen, and a deep understanding of Asian cuisine and modern restaurant operations.
Key Responsibilities
Kitchen Operations & Leadership
* Lead and manage all kitchen staff, ensuring smooth daily operations.
* Maintain the highest standards of food quality, consistency, and presentation.
* Develop and enforce SOPs, recipes, and kitchen standards.
* Conduct regular training sessions and mentor kitchen team members.
* Ensure compliance with food safety, hygiene, and sanitation standards.
Inventory & Cost Control
* Manage stock levels and inventory efficiently.
* Monitor food costs and implement effective cost-control measures.
* Oversee purchasing and supplier relationships.
* Minimize wastage through proper planning and inventory management.
* Conduct regular stock audits and variance analysis.
Financial Management
* Prepare and maintain recipe costing sheets.
* Monitor plated dish costing and menu profitability.
* Manage kitchen labor costs and salary budgeting.
* Assist in preparing monthly budgets and forecasting.
* Analyze food cost percentages and recommend improvements.
Menu Development
* Create innovative menu concepts aligned with the restaurant’s vision.
* Develop seasonal and special menus.
* Introduce new dishes and continuously improve existing offerings.
* Conduct recipe trials and standardization.
* Stay updated with emerging food trends and customer preferences.
Team Management
* Recruit, train, and evaluate kitchen staff.
* Create staff schedules and manage manpower effectively.
* Foster a positive, disciplined, and professional kitchen culture.
* Conduct performance reviews and support employee development.
Requirements
* Minimum 5 years of experience as an Executive Chef or Senior Sous Chef in a high-volume restaurant.
* Strong knowledge of Asian cuisine (Pan-Asian, Southeast Asian, East Asian, or related concepts).
* Proven experience in food costing, inventory management, and budgeting.
* Strong leadership and team management skills.
* Ability to maintain quality standards under pressure.
* Excellent organizational and communication skills.
* Familiarity with kitchen management systems and inventory software is an advantage.
