Quality Head – FMCG (Chocolate Manufacturing)
Industry: FMCG – Chocolate / Confectionery Manufacturing
Experience: 12–18 Years
Qualification: B.Tech/B.Sc./M.Tech/M.Sc. in Food Technology, Food Science, Dairy Technology, Microbiology, or related field. Certifications in HACCP, FSSC 22000/ISO 22000, GMP, and Lead Auditor are preferred.
Key Responsibilities
- Lead the Quality Assurance (QA), Quality Control (QC), Food Safety, and Laboratory functions across the manufacturing plant.
- Develop and implement Quality Management Systems (QMS) in compliance with FSSC 22000, HACCP, GMP, GHP, ISO standards, and FSSAI regulations.
- Ensure quality of raw materials (cocoa, milk powder, sugar, fats, flavors, emulsifiers, packaging materials), in-process products, and finished chocolates.
- Establish and monitor quality standards, SOPs, specifications, and testing protocols.
- Drive continuous improvement initiatives to reduce defects, customer complaints, product rejections, and manufacturing losses.
- Lead root cause analysis (RCA), CAPA implementation, and preventive quality initiatives.
- Oversee microbiological, chemical, and physical testing while ensuring laboratory compliance and equipment calibration.
- Ensure food safety, allergen management, traceability, product release, and recall readiness.
- Manage internal, customer, certification, and regulatory audits while ensuring timely closure of audit observations.
- Monitor hygiene, sanitation, pest control, environmental monitoring, and GMP compliance across production.
- Evaluate and approve suppliers through audits, quality assessments, and vendor performance reviews.
- Collaborate with Production, R&D, Procurement, Engineering, and Supply Chain to ensure consistent product quality and successful new product launches.
- Develop quality KPIs, analyze trends, and present quality performance reports to senior management.
- Build and mentor high-performing QA/QC teams while promoting a strong quality culture.

Preferred Experience
- Experience in chocolate, confectionery, biscuits, bakery, dairy, or food FMCG manufacturing.
- Strong understanding of chocolate processing operations such as mixing, refining, conching, tempering, moulding, cooling, and packaging, along with quality control at each stage.
- Experience handling customer audits, export compliance, and multi-plant quality operations is an added advantage.
Pay: ₹90,000.00 - ₹130,000.00 per month
