Role Overview
Centro is looking for a skilled and passionate South Indian Chef who can prepare authentic, consistent, and high-quality South Indian food while maintaining the brand’s standards of taste, presentation, hygiene, and kitchen discipline.
The ideal candidate should have strong hands-on experience with idli, dosa, uttapam, vada, chutneys, sambhar, podis, South Indian rice preparations, breakfast items, and regional specials. The chef should be able to manage prep, service, consistency, and cleanliness independently.
Key Responsibilities
Prepare and execute South Indian dishes as per Centro’s recipes, portioning, plating, and quality standards.
Handle daily preparation of:
- Idli / dosa / uttapam batter
- Medu vada batter
- Sambhar, rasam, kootu, kurma, stew, and gravies
- Coconut chutney, tomato chutney, peanut chutney, podi, and other accompaniments
- Dosa, ghee roast, set dosa, pesarattu, appam, paniyaram, pongal, upma, South Indian rice dishes, etc.
Ensure correct fermentation, batter consistency, seasoning, tempering, and cooking techniques.
Manage live orders during service with speed, cleanliness, and consistency.
Maintain high standards of hygiene, grooming, and food safety at all times.
Control wastage and follow proper storage, FIFO, labelling, and portion control practices.
Coordinate with the kitchen team for prep planning, stock requirements, and smooth service.
Maintain equipment such as dosa tawa, wet grinder, steamer, fryer, induction/gas range, and prep tools.
Assist in menu development, trials, and improvement of South Indian offerings when required.
Follow Centro’s standards for presentation, taste, and guest experience.
Required Skills & Experience
Minimum 3–5 years of experience as a South Indian Chef in a restaurant, hotel, café, or catering setup.
Strong knowledge of authentic South Indian cooking techniques.
Excellent understanding of fermentation, batter making, tempering, chutney/sambhar balance, and tawa handling.
Ability to work under pressure during busy service hours.
Should be disciplined, clean, punctual, and consistent.
Basic knowledge of kitchen hygiene, food safety, and storage standards.
Ability to follow recipes and maintain standardisation.
Team player with a positive attitude.
Preferred Skills
Experience with premium café / restaurant-style South Indian food.
Ability to make regional specials from Tamil Nadu, Karnataka, Kerala, Andhra, and Telangana.
Basic understanding of modern plating and café-style presentation.
Experience in breakfast/brunch menus will be an advantage.

Salary
Salary will be based on experience, skill level, and trial performance.
Salary Range: ₹20,000 – ₹28,000 per month
