We are an exciting food startup in Coimbatore focused on serving authentic, high-quality Biryani, Kababs, Parottas, and South Indian specialties. We are looking for a passionate and experienced Chef (Master) who can build our kitchen operations, maintain consistency, and help grow our brand.
Job Summary
We are seeking a skilled and experienced Chef/Master with expertise in preparing authentic Chicken & Mutton Biryani, Kababs, Parottas, and Dosa varieties. The ideal candidate should have strong knowledge of traditional cooking methods, bulk production, recipe standardization, and kitchen management while maintaining the highest standards of hygiene and food quality.
Key ResponsibilitiesBiryani Preparation
- Prepare authentic Chicken, Mutton, and Veg Biryani using traditional Dum cooking methods.
- Ensure consistent taste, aroma, texture, and presentation.
- Prepare and manage spice blends, marinades, and gravies.
- Handle bulk production for dine-in, takeaway, and online orders.
- Maintain portion control and minimize food wastage.
Kabab & Grill
- Prepare a variety of Kababs including:
- Chicken Seekh Kabab
- Chicken Tikka
- Reshmi Kabab
- Malai Kabab
- Mutton Seekh Kabab
- Grilled & BBQ items
- Ensure proper marination and grilling techniques.
Parotta & Dosa
- Prepare:
- Plain Parotta
- Bun Parotta
- Kothu Parotta
- Egg Kothu
- Plain Dosa
- Kal Dosa
- Ghee Dosa
- Egg Dosa
- Kari Dosa
- Maintain consistency in dough preparation and dosa batter fermentation.
Kitchen Operations
- Plan daily food production based on demand.
- Maintain hygiene and food safety standards.
- Monitor stock levels and coordinate purchasing.
- Reduce food wastage and control food costs.
- Supervise kitchen assistants and helpers.
- Train junior staff on recipes and SOPs.
- Ensure timely order preparation during peak hours.
- Maintain cleanliness of kitchen equipment and workstations.
Candidate RequirementsExperience
- Minimum 5–10 years of experience in Biryani and South Indian restaurant kitchens.
- Experience handling large-scale food production (25 kg or more per batch preferred).
- Previous experience in restaurants, hotels, or cloud kitchens is an advantage.
Skills Required
- Expert in Dum Biryani preparation.
- Strong knowledge of spice balancing and marination.
- Expertise in Kabab preparation.
- Excellent Parotta flipping and Dosa-making skills.
- Knowledge of food costing and inventory management.
- Ability to work under pressure during busy service hours.
- Leadership and team management skills.
- Strong commitment to cleanliness and food safety.
Preferred Qualifications
- Diploma or Certification in Hotel Management or Culinary Arts (preferred but not mandatory).
- Knowledge of FSSAI food safety practices.
- Ability to create new recipes and improve existing menu items.
