An Indian Commis 1 (or Commis I) is a skilled chef de partie-level position, often specializing in North Indian, South Indian, or Tandoor cuisine. They are responsible for leading daily food preparation, cooking, managing specific kitchen stations, maintaining high hygiene standards, and supervising junior staff, usually reporting to a Chef de Partie or Sous Chef.
Key Responsibilities
- Cooking & Preparation: Prepare and cook Indian dishes according to standard recipes, ensuring consistency in taste, quality, and presentation.
- Station Management: Lead a specific section (e.g., Tandoor, Curry, or South Indian), ensuring the station is clean, organized, and adequately stocked.
- Ingredient Handling: Properly prepare, slice, marinate, chop, and store ingredients, including spices, meats, and vegetables.
- Hygiene & Safety: Maintain high food safety standards (HACCP), including temperature checks, proper food labeling, and sanitizing workspaces.
- Inventory Control: Monitor stock levels and report shortages of materials.
- Team Support: Guide and educate junior chefs (Commis 2 or 3) and assist senior chefs in daily operations.
Required Qualifications & Skills
- Experience: 1-3 years of professional experience in an Indian kitchen, with demonstrated ability in tandoor or curry cooking.
- Culinary Training: Diploma or certification in culinary arts is preferred.
- Technical Skills: Knowledge of Indian spices, authentic preparation techniques, and strong knife skills.
- Soft Skills: Team player, ability to work under pressure, attention to detail, and a willingness to learn.
