Job Summary
We are looking for an experienced, passionate, and creative Head Baker Chef to lead our bakery operations. The ideal candidate should possess strong technical baking skills, exceptional leadership abilities, and experience in managing production, quality control, inventory, and food safety standards. The Head Baker Chef will be responsible for maintaining consistency, developing innovative bakery products, and leading the bakery team to achieve operational excellence.
Key Responsibilities
- Lead and manage the day-to-day bakery operations.
- Prepare high-quality artisan breads, croissants, viennoiserie, cakes, pastries, cookies, desserts, and other baked products.
- Develop seasonal menus and introduce innovative bakery products.
- Standardize recipes and ensure consistency in taste, texture, and presentation.
- Supervise, train, and mentor bakery staff while maintaining high productivity and discipline.
- Monitor daily production schedules based on business requirements.
- Maintain strict food safety, hygiene, sanitation, and FSSAI standards.
- Control food costs through proper inventory management, portion control, and wastage reduction.
- Coordinate with vendors for procurement of bakery ingredients and ensure quality of raw materials.
- Ensure preventive maintenance and proper usage of bakery equipment.
- Collaborate with the Head Chef and Café Management for menu planning, promotions, and special events.
- Monitor product quality and continuously improve bakery offerings based on customer feedback.
- Ensure timely preparation and delivery of bakery items for café operations.
Required Qualifications
- Diploma or Degree in Bakery & Pastry Arts, Culinary Arts, or a related field.
- Minimum 5–8 years of bakery experience with at least 2 years in a leadership role.
- Strong knowledge of artisan breads, laminated doughs, pastries, desserts, cakes, and bakery production.
- Excellent knowledge of bakery equipment and production planning.
- Strong leadership, communication, and team management skills.
- Good understanding of inventory management, food costing, and waste control.
- Ability to work efficiently in a fast-paced café environment.
- Knowledge of FSSAI food safety and hygiene regulations.
