Job Summary
The Bar Operations Manager is responsible for the end-to-end management of bar, including beverage service standards, inventory and cost control, licensing compliance, staff supervision, and guest experience. The role requires a strong balance of operational discipline, commercial acumen, and hospitality service orientation.
Key Responsibilities
1. Bar Operations & Service Standards
- Oversee daily operations across all bar counters/outlets, ensuring service consistency and adherence to SOPs.
- Set and monitor standards for drink preparation, presentation, and guest interaction.
- Handle guest escalations related to bar service promptly and professionally.
2. Inventory, Cost & Vendor Management
- Manage liquor, beverage, and bar consumable inventory — stock levels, wastage control, and reconciliation.
- Conduct regular stock audits and coordinate with Store & Purchase for timely replenishment.
- Monitor bar cost percentages, pilferage control, and portion/recipe compliance to protect margins.
- Liaise with approved vendors/suppliers for pricing, quality, and delivery schedules.
3. Regulatory & Licensing Compliance
- Ensure the property's bar license (Excise Department, Odisha) remains valid and all statutory registers (stock, sale, purchase) are maintained as required under the Odisha Excise Act/Rules.
- Ensure compliance with age-verification and responsible service of alcohol norms.
- Maintain documentation for excise inspections and renewals in coordination with Accounts/Admin.
4. Team Management
- Supervise, roster, and train bartenders, bar captains, and stewards across shifts (including night shift coverage, standard in hotel operations).
- Conduct grooming, hygiene, and service-etiquette checks.
- Support recruitment, onboarding, and performance evaluation of bar staff in coordination with HR.
- Handle first-level disciplinary matters within the outlet, escalating serious matters to HR per Standing Orders/Service Rules.
5. Revenue & Guest Experience
- Drive beverage sales through upselling, seasonal promotions, and curated drink menus.
- Analyze sales data (covers, average check, high-margin items) and report trends to F&B Manager.
- Ensure ambience, music, lighting, and cleanliness standards are maintained per brand guidelines.
6. Reporting & Coordination
- Submit daily/weekly MIS on bar sales, consumption, and variance.
- Participate in F&B cost meetings and contribute to menu engineering discussions.
- Coordinate with Maintenance for equipment upkeep (chillers, dispensers, glassware handling).
Qualifications & Experience
- Bachelor's degree in Hotel Management, Hospitality, or related field (Diploma with strong experience also considered).
- Minimum 4–6 years of experience in bar/beverage operations, with at least 1–2 years in a supervisory/managerial capacity.
- Prior experience in a branded high-volume bar preferred.
- Working knowledge of excise/licensing compliance for bar operations is an advantage.
Skills & Competencies
- Strong beverage knowledge (spirits, wines, mixology, mocktails & cocktails).
- Inventory and cost-control discipline.
- Team leadership and conflict resolution.
- Guest-handling and complaint resolution under pressure.
- Basic proficiency in MS Excel/POS systems for sales and stock reporting.
- Willingness to work rotational shifts, weekends, and extended hours during banquets/events, in line with hotel industry norms.
Working Conditions
- Shift-based role including evenings, weekends, and public holidays, as per Bar operational requirements.
- Standing/mobile role for extended periods within outlet premises.
Compensation
As per company pay structure, commensurate with experience — to be discussed at interview stage.
