Role Overview
M Grill is hiring an experienced Commi 1 specializing in South Indian cuisine. You will handle preparation and cooking of traditional South Indian dishes while ensuring taste, authenticity, hygiene, and consistency as per Paragon Group standards.
Key Responsibilities
- Prepare mise en place for South Indian section: batter, chutneys, sambar, curries, rice items
- Cook tiffin items: dosa, idli, vada, uttapam, appam, parotta, etc.
- Prepare South Indian meals, gravies, and side dishes as per SOP
- Maintain taste, quality, and standard portioning across all dishes
- Follow recipes, production charts, and plating standards set by CDP/DCDP
- Ensure kitchen hygiene, cleaning schedules, and FSSAI compliance
- Assist in stock-taking, indenting, and reducing wastage
- Maintain equipment and report any maintenance issues
Requirements
- 2–3 years experience as Commi 1/Commi 2 in South Indian restaurant or reputed hotel
- Strong knowledge of Kerala/Tamil Nadu dishes, batters, and spice blending
- Good knife skills and speed in bulk cooking
- Knowledge of FSSAI hygiene and food safety practices
- Team player, able to handle peak service hours
- Diploma/Craft Course in Food Production preferred
- Willing to work in shifts
