Role Description
This is a full-time, on-site role for a Chef de Partie (CDP) – Bakery & Confectionery at Délifrance India, located in East Bengaluru.
The CDP will be responsible for independently managing the Bakery & Confectionery section, ensuring the consistent production of high-quality cakes, pastries, desserts, designer cakes, and other confectionery products in line with Délifrance standards. The role requires strong technical expertise, leadership capabilities, and a commitment to maintaining exceptional quality, hygiene, and operational efficiency.
Key Responsibilities
- Independently manage the Bakery & Confectionery section and oversee day-to-day production activities.
- Lead the preparation and production of cakes, pastries, desserts, designer cakes, and confectionery products as per standardized recipes and presentation guidelines.
- Supervise and train junior kitchen staff, including DCDPs, Commis, and trainees within the pastry section.
- Ensure consistency in product quality, taste, portioning, and presentation.
- Plan daily production schedules based on sales forecasts and operational requirements.
- Monitor inventory levels and coordinate requisitions to ensure uninterrupted production.
- Minimize wastage and maintain effective cost control practices within the department.
- Ensure compliance with food safety, hygiene, sanitation, and HACCP standards.
- Maintain proper storage, stock rotation, and handling of all bakery ingredients and finished products.
- Assist in the development and execution of seasonal offerings, festive specials, and customized designer cake orders, where applicable.
Qualifications
The ideal candidate should possess the following:
- Strong knowledge of Bakery & Confectionery production techniques.
- Expertise in the preparation and finishing of cakes, pastries, desserts, and designer cakes.
- Knowledge of bakery equipment operation and maintenance.
- Good understanding of food costing, yield management, and inventory control.
- Strong leadership, team management, and communication skills.
- High attention to detail with a focus on quality and consistency.
- Ability to work efficiently in a fast-paced environment and meet production timelines.
Eligibility Criteria
- Candidates from Bakery, Pastry, or Confectionery backgrounds should apply.
- Minimum 3–5 years of relevant experience, including experience in a supervisory role within a bakery, pastry kitchen, hotel, café, or restaurant.
- Experience in designer cakes, celebration cakes, pastries, and dessert production will be preferred.
- Culinary education or professional certification in Bakery & Confectionery is desirable.
- Candidates should be capable of independently managing the Bakery & Confectionery section.
