Role Overview
The Chef at BONN TONN will be responsible for producing high-quality artisanal sourdough breads m sandwiches and other vennoiserre with consistency and precision. The role requires deep knowledge of natural fermentation, dough handling, and baking techniques, ensuring premium quality products aligned with the brand’s standards.
Key Responsibilities
1. Sourdough Production
- Prepare and maintain sourdough starter (levain)
- Execute daily production of sourdough breads (loaves, baguettes, specialty breads)
- Ensure consistency in texture, flavor, and crust quality
2. Fermentation & Dough Management
- Manage bulk fermentation, proofing, and hydration levels
- Monitor temperature, humidity, and fermentation timings
- Adjust recipes based on climate conditions (important for Kolkata weather)
3. Recipe Development
- Develop new sourdough variants (multigrain, seeded, flavored loaves)
- Standardize recipes and maintain documentation
- Innovate seasonal and premium offerings
4. Quality Control
- Ensure uniformity in:
- Crumb structure
- Crust color & texture
- Taste and aroma
- Maintain strict hygiene and food safety standards as per FSSAI guidelines
5. Production Planning
- Plan daily production based on demand forecasts
- Minimize wastage and optimize ingredient usage
- Coordinate with operations and sales teams for volume planning
6. Equipment Handling
- Operate deck ovens, proofers, and mixers efficiently
- Ensure proper maintenance and cleanliness of equipment
7. Team Training
- Train junior bakers in sourdough techniques
- Maintain SOPs for consistent production
- Build a skilled artisan baking team
Key Skills Required
- Strong expertise in sourdough and natural fermentation
- Knowledge of hydration, gluten development, and baking science
- Ability to handle high-volume production
- Attention to detail and consistency
- Passion for artisan baking
Preferred Qualifications
- 2–5 years experience as a sourdough baker / artisan bread chef
- Experience in premium bakery or hotel kitchens preferred
- Culinary or baking certification is a plus
