Role Summary
The Purchase Manager owns procurement as a strategic function — not transactional buying. This role ensures cost efficiency, supply reliability, and quality consistency across all food, beverage, and operational categories.

Scope of Role
- End-to-end procurement across F&B, packaging, cleaning supplies, and operational consumables
- Vendor sourcing, onboarding, and lifecycle management
- Inventory planning aligned with menu cycles and business volumes
- Cost control and margin protection
Key Responsibilities
- Build a diversified, reliable vendor base with contingency options for all critical SKUs
- Lead commercial negotiations and rate contracts with clear benchmarking
- Work closely with kitchen leadership to forecast demand and plan procurement cycles
- Implement structured ordering systems (daily, weekly, buffer stock logic)
- Ensure strict GRN (Goods Received Note) processes, quality checks, and rejection protocols
- Monitor and control food cost variance against targets
- Identify opportunities for cost optimization without affecting product quality
- Maintain accurate purchase records, audits, and compliance documentation
- Track market trends (seasonality, inflation, shortages) and proactively adapt sourcing

- Food cost % vs target
- Stock variance and wastage levels
- Vendor reliability and fill rate
- Frequency of stock-outs (critical vs non-critical)
- Purchase price variance over time
Candidate Profile
- 5–8+ years in procurement within hospitality or food-driven businesses
- Strong commercial acumen and negotiation capability
- Deep familiarity with perishables, yield, and storage constraints
- High system orientation — comfortable with inventory software and reporting
- Detail-driven with strong accountability mindset

- Stabilized vendor ecosystem with defined primary + backup vendors
- Predictable procurement cycles with minimal firefighting
- Visible improvement in cost control and reduced wastage
- Clean, auditable purchasing and inventory systems
Growth Path
- Scale into a Central Procurement Head role as new outlets/verticals expand
- Ownership of multi-unit sourcing strategy and import/specialty procurement
