The Tandoori Master is responsible for preparing a variety of tandoori dishes using a traditional clay oven (tandoor), including kebabs, naan, tandoori chicken, paneer tikka, and other grilled items. The role ensures authentic taste, proper marination, correct cooking techniques, and high-quality food presentation while maintaining hygiene and safety standards.
Key Responsibilities Food Preparation & Cooking
- Prepare and marinate meats, poultry, seafood, and vegetables as per recipes.
- Cook tandoori items such as chicken tikka, kebabs, tandoori roti, naan, and paneer dishes.
- Operate and manage the tandoor (clay oven) efficiently and safely.
- Ensure proper grilling, roasting, and smoking techniques for authentic flavor.
- Maintain consistency in taste, texture, and presentation.
Marination & Preparation
- Prepare spice mixes and marinades according to standard recipes.
- Ensure proper marination time for all ingredients.
- Maintain freshness and quality of raw materials.
Tandoor Management & Safety
- Preheat and maintain correct tandoor temperature.
- Handle charcoal/wood/gas tandoor safely.
- Follow fire safety and kitchen safety protocols.
- Ensure safe handling of hot equipment and tools.
Hygiene & Cleanliness
- Maintain cleanliness of tandoor area and kitchen workstation.
- Ensure proper storage of raw and cooked items.
- Follow food safety and hygiene standards strictly.
- Clean tools and equipment after use.
Inventory & Coordination
- Check stock of meats, vegetables, spices, and tandoor supplies.
- Inform kitchen supervisor about shortages or requirements.
- Coordinate with kitchen staff for timely food preparation and service.
Qualifications & SkillsEducation & Experience
- No formal degree required; culinary training is an advantage.
- 2–5 years of experience as Tandoori Chef / Tandoor Cook preferred.
- Experience in North Indian, Mughlai, or BBQ cuisine required.
Required Skills
- Strong knowledge of tandoor cooking techniques.
- Ability to prepare authentic marinades and spice blends.
- Good understanding of food safety and hygiene.
- Ability to work in high-temperature environments.
- Strong sense of taste, timing, and presentation.

Pay: ₹8,720.07 - ₹38,184.66 per month
