About the Role
We are looking for a passionate, creative, and experienced Head Baker to lead the bakery operations at Zilch Café. This is an exciting opportunity for someone who takes pride in artisan baking, enjoys developing premium bakery products, and thrives in a quality-driven kitchen environment.
As the Head Baker, you will be responsible for overseeing all bakery production, maintaining the highest standards of quality and consistency, mentoring the bakery team, and contributing to menu innovation that complements our premium café concept.
Key Responsibilities
- Lead and manage the day-to-day bakery operations.
- Prepare and oversee the production of artisan breads, sourdough, viennoiserie, pastries, desserts, and other baked goods.
- Ensure consistent product quality, presentation, and taste across all bakery offerings.
- Develop new recipes and seasonal menu additions aligned with Zilch's premium café concept.
- Train, mentor, and supervise the bakery team while fostering a positive and collaborative work environment.
- Plan daily production schedules based on forecasted business requirements.
- Monitor inventory, place ingredient requisitions, and minimize wastage through effective production planning.
- Ensure strict compliance with food safety, hygiene, HACCP, and sanitation standards.
- Work closely with the culinary and operations teams to continuously enhance the guest experience.
- Maintain equipment, oversee preventive maintenance, and ensure an organized bakery workspace.
Requirements
- Proven experience as a Head Baker, Bakery Chef, or Senior Bakery professional in premium cafés, artisan bakeries, hotels, or restaurants.
- Strong expertise in artisan breads, sourdough fermentation, laminated doughs, pastries, and modern baking techniques.
- Experience in recipe standardization, food costing, and production planning.
- Excellent leadership and team management skills.
- Strong understanding of food safety, hygiene, and quality standards.
- Passion for innovation, attention to detail, and commitment to excellence.
- Hospitality industry experience is highly preferred.
