Role Summary
We are looking for an experienced and passionate Tamil Chef/cook who has in-depth knowledge of authentic Tamil Nadu cuisine. The ideal candidate should be capable of preparing traditional recipes with consistency while maintaining the highest standards of quality, taste, presentation, and kitchen hygiene.
Key Responsibilities
- Prepare authentic Tamil Nadu dishes as per Suvai's standardized recipes.
- Ensure consistency in taste, quality, and presentation across all menu items.
- Prepare breakfast, lunch, snacks, and specialty dishes as per daily production requirements.
- Maintain proper mise en place and ensure timely food preparation during service hours.
- Monitor food quality, freshness, and portion control to minimize wastage.
- Maintain cleanliness and hygiene of the kitchen in compliance with FSSAI food safety standards.
- Ensure proper storage of raw materials and cooked food.
- Coordinate with kitchen staff to ensure smooth daily operations.
- Monitor inventory and inform management about ingredient requirements.
- Assist in menu development and seasonal or festival specials.
- Train junior kitchen staff on recipes, cooking techniques, and quality standards.
- Ensure proper maintenance and safe operation of kitchen equipment.
- Follow all company SOPs related to food preparation, hygiene, and safety.
Preferred Expertise
Experience in preparing authentic Tamil dishes such as:
- Idli, Dosa, Kal Dosa, Kothu Parotta
- Pongal, Upma, Podi Idli
- Sambar, Rasam, Vatha Kuzhambu
- Kara Kuzhambu, Mor Kuzhambu
- Chettinad specialties
- Variety Rice (Lemon Rice, Tamarind Rice, Coconut Rice, Curd Rice)
- Poriyal, Kootu, Avial
- Parotta, Chapati and South Indian breads
- Traditional chutneys and podis
- Tamil Nadu sweets and snacks
- Filter Coffee preparation
Required Qualifications
- Minimum 3–5 years of experience in authentic Tamil Nadu cuisine.
- Experience in restaurants, cafés, hotels, or specialty South Indian kitchens preferred.
- Strong knowledge of traditional cooking techniques and ingredients.
- Understanding of food safety, hygiene, and kitchen best practices.
- Ability to work efficiently under pressure during peak service hours.
- Good teamwork and communication skills.
- Passion for preserving authentic regional flavors.

- Knowledge of traditional Tamil recipes from different regions.
- Ability to standardize recipes and maintain consistency.
- Inventory and food cost awareness.
