The Sous Chef will be the Head Chef’s right hand, overseeing day-to-day kitchen operations for both Kafusa Cafe and Travelling Troopers Homestay meal service. You’ll ensure consistent food quality, manage inventory, supervise kitchen staff, and maintain high hygiene standards while supporting a homely, heartfelt dining experience for guests and homestay residents. *Key Responsibilities* *1. Kitchen Operations & Food Production* - Assist Head Chef in menu planning, recipe development, and costing for Kafusa Cafe menu + homestay meals - Lead prep, cooking, and plating during cafe service and homestay meal times - Ensure consistent taste, portion control, and presentation across all dishes - Coordinate with servers to manage order flow and special guest requests *2. Team Management* - Supervise commis chefs, cooks, and kitchen helpers - Train staff on recipes, SOPs, and hygiene standards - Create duty rosters and ensure proper handover between shifts *3. Inventory & Cost Control* - Monitor stock levels, place orders for ingredients, and minimize wastage - Conduct regular stock takes for dry, fresh, and frozen goods - Control food cost and reduce kitchen pilferage *4. Quality, Safety & Hygiene* - Maintain strict adherence to food safety, HACCP, and FSSAI standards - Ensure kitchen cleanliness, equipment maintenance, and proper storage - Oversee receiving, storage, and rotation of ingredients *5. Homestay + Cafe Coordination* - Plan meal schedules for homestay guests alongside cafe rush hours - Adapt recipes for bulk homestay service while keeping quality high - Communicate with front-of-house team on daily specials, 86 items, and guest feedback *Required Skills & Qualifications* - Diploma/Degree in Hotel Management or Culinary Arts preferred - 2-4 years experience as a Chef de Partie or Sous Chef in restaurant, cafe, or hotel - Strong knowledge of Indian, Continental, and cafe-style cuisine - Hands-on experience with kitchen equipment, inventory systems, and cost control - Leadership skills + ability to work under pressure during peak hours - FSSAI Food Safety Supervisor certification is a plus *What We’re Looking For* Someone who loves cooking with heart, can balance creativity with consistency, and thrives in a homestay + cafe environment where every guest feels at home
