Core Responsibilities
Production Management & Optimization
- Plan and supervise daily bakery and confectionery production schedules.
- Ensure all high-volume production targets are achieved consistently.
- Monitor large-scale batch production to maximize workforce and ingredient utilization.
- Coordinate operations seamlessly with procurement, quality assurance, maintenance, and logistics.
Recipe Standardization & Innovation
- Develop, standardize, and scale recipes for industrial-scale bakery production.
- Maintain precise control over taste, texture, appearance, and portion sizes.
- Lead new product development (NPD) and continuous product improvement initiatives.
- Conduct and validate large-batch product trials before commercial rollout.
Food Safety, Quality & Compliance
- Enforce strict compliance with FSSAI, HACCP, GMP, and internal company policies.
- Audit food quality at every stage of the baking and packaging process.
- Implement immediate corrective actions for quality variances or client complaints.
- Maintain world-class hygiene and sanitation standards across the 8,500 sq. ft. facility.
Team Leadership & Workforce Management
- Lead, train, and mentor a large team of bakery chefs, commis, and production staff.
- Conduct regular performance evaluations and identify technical skill gaps for training.
- Execute strategic workforce planning, scheduling, and shift management.
- Foster a disciplined, collaborative, and highly motivated kitchen environment.
Cost Control & Inventory Management
- Monitor raw material yields closely to eliminate ingredient wastage.
- Manage food cost, recipe yield analysis, and overall production efficiency.
- Partner with stores and procurement for seamless ingredient forecasting.
- Enforce strict First-In, First-Out (FIFO) and First-Expired, First-Out (FEFO) rules.
Equipment & Maintenance
- Supervise the correct operation, safety, and handling of industrial bakery equipment.
- Report technical breakdowns immediately and coordinate swift repairs.
- Monitor preventive maintenance schedules to prevent costly production downtime.
Reporting & Analytics
- Maintain flawless production records, batch sheets, and quality assurance logs.
- Prepare comprehensive daily, weekly, and monthly CPU output reports.
- Monitor key performance indicators (KPIs) to propose continuous improvement measures.
Candidate RequirementsEducation & Certifications
- Degree/Diploma: Culinary Arts, Hotel Management, Food Production, or a related field.
- Food Safety: Valid Food Safety, FSSAI, or HACCP certification is highly preferred.
Experience
- Total Experience: 10+ years in commercial food production, central kitchens, industrial catering, or large-scale bakery manufacturing.
- Leadership Tenure: Minimum 8–10 years spent specifically in a supervisory or head culinary role.
- Operation Scale: Proven track record of managing large-scale, high-volume automated or semi-automated bakery production lines.
Pay: ₹60,000.00 - ₹100,000.00 per month
