Job Title: Commi I / Commi 2– Continental
Department: Food Production – Continental Kitchen
Reports To: Chef de Partie / Sous Chef / Executive Chef
Job Summary:
The Commi I (Continental) is responsible for preparing and cooking Continental cuisine while ensuring high standards of food quality, hygiene, and presentation. The role supports daily kitchen operations and assists senior chefs in delivering exceptional guest experiences.
Key Responsibilities:
- Prepare and cook Continental dishes such as soups, salads, sauces, pastas, grills, steaks, sandwiches, and breakfast items as per standard recipes.
- Ensure proper mise-en-place and workstation setup before each service.
- Maintain consistency in taste, quality, portion size, and presentation standards.
- Operate and maintain kitchen equipment such as ovens, grills, fryers, salamanders, and mixers safely.
- Follow HACCP, FSSAI, and hotel food safety and hygiene standards at all times.
- Ensure proper storage, labeling, and stock rotation of food items following FIFO procedures.
- Monitor food quality, minimize wastage, and assist in controlling food costs.
- Maintain cleanliness and sanitation of workstations, equipment, and utensils.
- Assist in receiving, checking, and storing kitchen supplies and inventory.
- Coordinate effectively with kitchen and service teams to ensure smooth operations during service hours.
Qualifications & Requirements:
- Diploma or Certificate in Hotel Management/Culinary Arts preferred.
- Minimum 2–4 years of experience in a Continental kitchen in hotels or restaurants.
- Good knowledge of Continental cuisine, cooking methods, and plating techniques.
- Ability to work under pressure and in shifts.
- Strong communication and teamwork skills.
