Job Overview
Nasiklub is seeking a skilled and creative Tandoor Chef to lead our vegetarian clay-oven section. As a pure vegetarian property, we pride ourselves on delivering innovative and high-quality Indian breads and starters. You will be responsible for everything from the perfect char on a paneer tikka to the softest specialty naans, ensuring that our members experience the finest tandoori flavors in Nashik.
Key Responsibilities1. Culinary Excellence (Vegetarian Focus)
- Starters: Expert preparation and marination of vegetarian starters including Paneer Tikka, Soya Chaap, Tandoori Aloo, Mushroom Tikka, and Seekh Kebabs (Veg).
- Breads: Handcrafting a variety of Indian breads such as Butter Naan, Garlic Naan, Missi Roti, Laccha Paratha, and Kulchas.
- Marination: Mastery of "Yellow," "White," and "Red" marinades, ensuring no cross-contamination with non-veg products (as per property rules).
2. Tandoor Management
- Temperature Control: Managing the heat of the clay oven (Tandoor) to ensure even cooking without burning.
- Maintenance: Seasoning new tandoors and maintaining existing ones for longevity and hygiene.
- Fuel Management: Efficiently managing charcoal or gas usage to optimize costs.
3. Operational Duties
- Mise-en-place: Organizing the clay oven area before service, ensuring all doughs and marinated items are ready.
- Inventory: Tracking stock levels for flour, dairy, vegetables, and specialized spices.
- Hygiene: Adhering to FSSAI standards and maintaining a "Clean-as-you-go" policy in the Tandoor bay.

- Creativity: Developing new vegetarian tandoori specials (e.g., stuffed mushrooms or fruit-based tikkas).
- Teamwork: Coordinating with the Halwai and Curry sections to ensure appetizers and breads are served hot with the main course.
