Restaurant General Manager – Fine Dining

We are launching a premium fine-dining restaurant in Puducherry, bringing together the rich flavours of Persian, Arabian, North Indian, and multi-cuisine gastronomy with world-class hospitality. We are seeking an accomplished Restaurant General Manager who is passionate about luxury dining, operational excellence, and exceptional guest experiences.

Your Role
As Restaurant General Manager, you will be responsible for the complete leadership and commercial success of the restaurant, ensuring every guest receives an unforgettable dining experience while delivering outstanding financial and operational performance.
Key Responsibilities
Operational Leadership
- Direct and oversee all front-of-house and back-of-house operations.
- Ensure flawless execution of daily service with exceptional attention to detail.
- Develop and implement Standard Operating Procedures (SOPs) to maintain consistency.
- Drive operational efficiency while preserving premium service standards.
Guest Experience
- Create memorable guest experiences through personalized hospitality.
- Build strong relationships with guests and corporate clients.
- Resolve guest concerns professionally and proactively.
- Maintain the highest standards of service excellence and customer satisfaction.
People Leadership
- Recruit, mentor, and develop high-performing restaurant teams.
- Foster a culture of accountability, professionalism, and continuous improvement.
- Conduct regular performance reviews, coaching sessions, and training programs.
- Lead by example and inspire excellence across all departments.
Financial & Commercial Management
- Drive revenue growth while maintaining profitability.
- Manage restaurant P&L, budgets, and financial reporting.
- Monitor food cost, beverage cost, labour cost, and operating expenses.
- Analyse business performance and implement strategies to improve margins.
- Maximise average spend per guest and increase repeat business.
Food & Beverage Excellence
- Collaborate closely with Executive Chefs on menu planning and seasonal offerings.
- Ensure exceptional food quality, presentation, consistency, and speed of service.
- Monitor inventory, purchasing, and supplier performance.
- Minimise wastage through effective stock and cost control.
Compliance & Quality Assurance
- Ensure full compliance with FSSAI regulations, food safety standards, hygiene protocols, and workplace safety requirements.
- Maintain audit readiness and uphold the highest operational standards.
- Ensure compliance with licensing and statutory requirements.
Business Development
- Develop local marketing initiatives and community partnerships.
- Support promotional campaigns, events, and corporate dining opportunities.
- Enhance brand visibility and strengthen customer loyalty.
Ideal Candidate
We are looking for a hospitality professional who combines strategic leadership with hands-on operational expertise.
Qualifications
- Bachelor's Degree or Diploma in Hotel Management, Hospitality Management, Business Administration, or a related discipline.
- Minimum 5–7 years of progressive experience in restaurant operations.
- At least 3 years in a Restaurant General Manager or Senior Restaurant Manager position within premium casual dining or fine-dining establishments.
Preferred Background
Candidates with experience in renowned hospitality brands or premium restaurant groups will be highly preferred, including luxury hotels, upscale dining chains, and established fine-dining restaurants.
