Demi Chef de Partie (DCDP) – South Indian Cuisine

Job Summary
Semolina Kitchens is looking for a passionate Demi Chef de Partie (DCDP) – South Indian Cuisine to support the preparation of authentic South Indian dishes at our premium Airport Lounge. The successful candidate will assist in maintaining quality, hygiene, and efficient kitchen operations while delivering an outstanding dining experience.
Key Responsibilities
- Prepare authentic South Indian dishes, including dosas, idlis, vadas, uttapams, sambhar, chutneys, and regional specialties.
- Assist in the daily operations of the South Indian kitchen section.
- Support buffet service and live dosa counters.
- Ensure proper mise en place before service.
- Maintain consistency in food quality, taste, and presentation.
- Follow HACCP standards, food safety procedures, and hygiene practices.
- Ensure proper storage, stock rotation (FIFO), and minimize food wastage.
- Maintain cleanliness and organization of the work area.
- Coordinate effectively with senior chefs and other kitchen sections during service.
Qualifications & Experience
- Diploma or Degree in Hotel Management or Culinary Arts.
- 2–4 years of experience in South Indian cuisine within hotels, airport lounges, airline catering, or premium hospitality.
- Good knowledge of traditional South Indian cooking techniques and buffet operations.
- Familiarity with food safety and hygiene standards.
- Ability to work rotational shifts, including nights.
Preferred Skills
- Experience with live dosa counters is an advantage.
- Good communication and teamwork skills.
- Strong attention to detail and consistency.
- Ability to multitask in a fast-paced kitchen environment.
