A Chinese CDP (Chef de Partie) manages the Chinese/Asian section of a commercial kitchen. They are responsible for preparing and cooking authentic dishes, handling wok stations, supervising junior cooks (Commis), and ensuring recipe consistency, food safety, and strict cost control.
Key Duties and Responsibilities
- Food Preparation & Cooking: Prepare and present high-quality Chinese dishes (e.g., dim sum, noodles, stir-fries) strictly adhering to standard recipes. Expertly handle wok cooking, high heat, and seasoning balancing.
- Station Management: Lead the daily mise en place (prep work) and manage the daily operations of the Chinese section independently during busy service hours.
- Staff Supervision: Train, guide, and delegate tasks to junior Commis chefs and kitchen helpers.
- Quality & Cost Control: Monitor inventory levels of Chinese ingredients, assist with ordering, and minimize food wastage.
- Hygiene & Safety: Maintain the highest cleanliness standards and enforce strict food safety/HACCP regulations.
Pay: ₹25,000.00 - ₹30,000.00 per month
