Position Summary
Della Resorts & Adventure is looking for a proactive and detail-oriented Hygiene Officer to ensure the highest standards of hygiene, sanitation, and cleanliness across all Food & Beverage production and service areas. The Hygiene Officer will be responsible for implementing hygiene protocols, conducting inspections, training associates, and ensuring compliance with FSSAI, HACCP, GMP, and resort hygiene standards to maintain a safe and healthy environment for guests and employees.
Key Responsibilities
Hygiene & Sanitation
- Monitor and maintain hygiene standards across all kitchens, restaurants, bars, banquet facilities, stewarding areas, and food storage locations.
- Conduct daily hygiene inspections and ensure compliance with established SOPs.
- Verify proper cleaning and sanitisation of equipment, utensils, workstations, and food contact surfaces.
- Ensure personal hygiene standards are followed by all Food & Beverage associates.
- Monitor waste segregation, disposal practices, and overall cleanliness of operational areas.
Food Safety Support
- Assist in implementing and maintaining HACCP, GMP, and GHP standards.
- Monitor food storage temperatures, labelling, FIFO/FEFO practices, and cross-contamination controls.
- Ensure safe handling of raw and cooked food products.
- Support food safety audits and compliance activities.
Audits & Compliance
- Conduct routine hygiene audits and inspections.
- Maintain hygiene checklists, records, and corrective action reports.
- Assist during internal, external, and statutory inspections.
- Follow up on corrective and preventive actions (CAPA) until closure.
Pest Control Management
- Coordinate with approved pest control agencies.
- Monitor pest activity and ensure preventive measures are effectively implemented.
- Maintain pest control records and reports.
Training & Awareness
- Conduct hygiene and sanitation training programmes for kitchen and service associates.
- Educate employees on personal hygiene, handwashing procedures, cleaning protocols, and food safety best practices.
- Promote a culture of cleanliness and hygiene throughout the resort.
Chemical & Cleaning Management
- Monitor the safe storage, handling, and usage of cleaning chemicals.
- Ensure Material Safety Data Sheets (MSDS) are available and followed.
- Verify correct chemical dilution and usage procedures.
Documentation & Reporting
- Maintain daily hygiene inspection reports and sanitation records.
- Prepare weekly and monthly hygiene compliance reports.
- Record deviations and ensure timely implementation of corrective actions.
Qualifications
- Bachelor's Degree or Diploma in Hotel Management, Food Science, Microbiology, Environmental Health, Hospitality Management, or a related field.
- HACCP and Food Safety certification preferred.
- FSSAI FoSTaC certification is an added advantage.
Experience
- 2–5 years of experience in hygiene, sanitation, food safety, or quality assurance within hotels, resorts, restaurants, or hospitality operations.
- Experience in luxury hospitality environments is preferred.
Skills & Competencies

- Knowledge of FSSAI, HACCP, GMP, and GHP guidelines.
- Excellent inspection and auditing skills.
- Strong communication and training abilities.
- Good organisational and documentation skills.

- Proficiency in Microsoft Office and digital reporting tools.
