Job Summary
The Brewer is responsible for operating and monitoring the brewing process to produce beer according to quality standards and production schedules. The role includes managing raw materials, fermentation processes, equipment sanitation, and maintaining accurate production records.
Key Responsibilities
1. Brewing Operations
- Carry out all stages of the brewing process including mashing, lautering, boiling, fermentation, conditioning, and filtration.
- Follow approved beer recipes and brewing procedures.
- Monitor brewing parameters such as temperature, pressure, flow rate, and timing.
2. Raw Material Management
- Handle and measure brewing ingredients including malt, hops, yeast, water, and adjuncts.
- Ensure proper storage and handling of raw materials.
- Monitor stock levels and report shortages.
- 3. Fermentation Management
- Pitch yeast and monitor fermentation activity.
4. Quality Control
- Conduct routine quality checks during brewing and fermentation.
- Monitor beer clarity, flavor, aroma, alcohol content, and carbonation levels.
- Ensure compliance with brewery quality standards.
5. Equipment Operation & Sanitation
- Operate brewing equipment including mash tuns, brew kettles, fermenters, filtration units, and pumps.
- Perform CIP (Clean-in-Place) and sanitation procedures.
- Identify and report equipment faults or maintenance requirements.
- Maintain fermentation conditions such as temperature, gravity, and pH.
- Perform yeast harvesting and storage when required.
- 6. Documentation & Reporting
- Maintain accurate brewing logs and batch records.
7. Safety & Compliance
- Follow food safety, hygiene, and brewery safety regulations.
- Ensure compliance with regulatory standards for alcohol production.
- Use personal protective equipment (PPE) as required.
- Record production data including ingredient usage, fermentation data, and quality test results.
- Submit reports to the Brewmaster or Production Manager.
Pay: ₹18,000.00 - ₹25,000.00 per month
