Job Title: Food & Beverage Cost Controller

Job Summary:
The Food & Beverage Cost Controller is responsible for monitoring and controlling food and beverage costs, maintaining inventory accuracy, ensuring proper stock management, and supporting profitability through effective cost analysis and reporting.
Key Responsibilities:
- Monitor daily food and beverage costs and prepare cost analysis reports.
- Conduct regular inventory and stock audits for food, beverages, and operating supplies.
- Verify purchase orders, goods received, and supplier invoices.
- Ensure standard recipes, portion control, and food costing are followed.
- Analyze consumption patterns and identify cost-saving opportunities.
- Monitor wastage, spoilage, and pilferage, and recommend corrective actions.
- Coordinate with the Purchase, Stores, Kitchen, Bar, and Restaurant teams for inventory control.
- Prepare monthly closing reports, stock reconciliation, and variance analysis.
- Ensure compliance with company policies and internal audit procedures.
- Support management with budgeting, menu costing, and pricing recommendations.
Qualifications & Skills:
- Bachelor's degree or Diploma in Hospitality, Hotel Management, Commerce, or a related field.
- 3–5 years of experience as an F&B Cost Controller, preferably in the hospitality industry.
- Strong knowledge of food costing, inventory management, and cost control procedures.
- Proficiency in Microsoft Excel and hotel/POS inventory software.
- Good analytical, numerical, and reporting skills.
- Strong attention to detail and organizational abilities.
- Ability to work closely with multiple departments and meet reporting deadlines.
Working Conditions:
- Willing to work flexible hours, including weekends and holidays, based on operational requirements.
- Ability to conduct physical stock verification and regular inventory checks.
