Job Summary:
The Commis I – South Indian Chef is responsible for preparing, cooking, and presenting authentic South Indian dishes while maintaining high standards of food quality, hygiene, and kitchen operations. The role supports senior chefs in daily food production and ensures consistency in taste, presentation, and guest satisfaction.
Key Responsibilities:Food Preparation & Cooking
- Prepare and cook South Indian dishes such as dosa, idli, vada, uttapam, sambar, rasam, chutneys, pongal, and other regional specialties.
- Ensure all dishes are prepared according to standard recipes and presentation guidelines.
- Maintain consistency in taste, quality, and portion sizes.
- Prepare mise en place for daily operations and buffet service.
Kitchen Operations
- Manage the assigned kitchen section efficiently during service.
- Monitor stock levels and raise requisitions for ingredients when required.
- Ensure proper storage, labeling, and rotation of food items (FIFO).
- Minimize food wastage and control food costs.
Hygiene & Food Safety
- Follow HACCP and food safety standards at all times.
- Maintain cleanliness of workstations, kitchen equipment, and storage areas.
- Ensure personal grooming and hygiene standards are maintained.
- Conduct temperature checks and proper food handling procedures.
Team Support
- Assist Sous Chef and Chef de Partie in daily kitchen operations.
- Guide and support junior kitchen staff and trainees.
- Coordinate with service staff to ensure smooth kitchen operations.
- Participate in menu planning and recipe standardization when required.
Qualifications & Experience
- Minimum 2–3 years of experience in South Indian cuisine in hotels, restaurants, or resorts.
- Strong knowledge of South Indian ingredients, spices, cooking methods, and traditional recipes.
- Ability to work under pressure in a fast-paced kitchen environment.

Salary Range
₹20,000 – ₹30000 per month (depending on experience, property, and location).
