The Baker – Chef de Partie is responsible for preparing, baking, and presenting high-quality breads, pastries, cakes, and other baked goods while maintaining food safety, hygiene, and quality standards. The role involves managing a designated bakery section, ensuring consistency in production, and supporting junior team members to achieve operational excellence.
- Prepare and bake a variety of breads, rolls, pastries, cakes, cookies, and specialty bakery items according to recipes and standards.
- Manage daily mise en place and production schedules for the bakery section.
- Ensure consistency in taste, texture, appearance, and portion control.
- Monitor ingredient quality and maintain proper storage procedures.
- Operate and maintain bakery equipment safely and efficiently.
- Follow HACCP, food safety, and hygiene standards at all times.
- Assist in developing new bakery products, seasonal menus, and specialty items.
- Supervise and train Commis Chefs and bakery assistants.
- Control wastage and ensure efficient utilization of ingredients.
- Conduct daily inventory checks and assist with stock ordering.
- Ensure timely production and delivery of bakery products to meet operational requirements.
- Maintain cleanliness and organization of the bakery workstation.
- Diploma or certification in Bakery, Pastry Arts, Culinary Arts, or a related field.
- Minimum 2–4 years of bakery experience.
- Strong knowledge of artisan breads, laminated doughs, pastries, cakes, and bakery production techniques.
- Experience working in hotels, luxury resorts, fine dining establishments, or large-scale bakery operations is preferred.
- Advanced baking and pastry preparation skills.
- Knowledge of food safety and sanitation standards.
- Strong organizational and time-management abilities.
- Ability to work under pressure and meet production deadlines.
