Job Summary:
Hotel Red Diamond is seeking a highly experienced Sr. CDP – Tandoor with strong expertise in Indian tandoori cuisine. The candidate will lead the tandoor section, ensuring high-quality food production, consistency, and smooth kitchen operations.
Key Responsibilities:
- Manage complete operations of the tandoor section
- Prepare a wide range of tandoori dishes (naan, roti, kebabs, tikka, etc.)
- Ensure consistency in taste, quality, and presentation
- Handle marination, mise-en-place, and daily preparation
- Maintain hygiene and food safety standards (HACCP)
- Monitor stock levels, reduce wastage, and control food cost
- Supervise and guide junior kitchen staff
- Coordinate with Sous Chef/Head Chef for daily operations
- Ensure proper usage and maintenance of tandoor equipment
- Maintain discipline and efficiency during peak hours
Requirements:
- Minimum 7–8 years of experience as CDP – Tandoor (mandatory)
- Strong hands-on experience in tandoori cooking
- Experience in hotel or high-volume restaurant preferred
- Good team handling and leadership skills
- Ability to work under pressure and in rotational shifts
Preferred Qualifications:
- Diploma/Degree in Culinary Arts
- Specialization in North Indian cuisine
- Basic communication skills
