Job Summary
The Commi I (South Indian) is responsible for assisting in the preparation and production of South Indian dishes while maintaining high standards of quality, hygiene, and consistency as per hotel and brand SOPs. The role supports smooth kitchen operations across restaurants, banquets, and breakfast service.
Key Responsibilities
- Assist in the preparation of South Indian dishes such as idli, dosa, vada, uttapam, chutneys, sambars, and basic curries
- Carry out daily mise-en-place as per instructions from senior chefs
- Ensure correct portioning, taste, and presentation standards
- Support live counters and buffet setups when required
- Follow standard recipes and cooking methods as per brand guidelines
- Ensure timely service during peak operations
- Coordinate with team members for smooth workflow within the section
- Maintain high standards of cleanliness and personal hygiene
- Ensure proper storage, labeling, and FIFO of ingredients
- Continuously learn South Indian cooking techniques and hotel standards
- Take guidance from CDP/Senior CDP to improve skills and efficiency
- Be open to cross-training in other kitchen sections if required
- Maintain positive working relationships with colleagues
- Follow hotel rules, grooming standards, and discipline policies
- Report equipment issues or food quality concerns to supervisors
Requirements & Qualifications
- Certificate / Diploma in Culinary Arts or Hotel Management preferred
- 2–4 years of experience in South Indian kitchen operations
- Experience in a hotel or reputed restaurant is desirable
- Basic knowledge of South Indian ingredients and cooking methods
- Ability to work long hours, shifts, and under pressure
