Job Title: Commi I / Commi 2 – Chinese
Department: Food Production – Chinese Kitchen
Reports To: Chef de Partie / Sous Chef / Executive Chef
Job Summary:
The Commi I (Chinese) is responsible for preparing, cooking, and presenting authentic Chinese cuisine in accordance with hotel standards. The incumbent ensures consistent food quality, maintains hygiene and safety standards, and supports the efficient operation of the Chinese kitchen.
Key Responsibilities:
- Prepare and cook Chinese dishes as per standard recipes and presentation guidelines.
- Ensure mise-en-place is prepared and ready before the commencement of service.
- Prepare a variety of Chinese dishes including soups, noodles, fried rice, appetizers, stir-fries, and sauces.
- Maintain consistency in taste, portion size, quality, and presentation of all food items.
- Operate kitchen equipment such as woks, steamers, grills, and deep fryers safely and efficiently.
- Ensure all food items are prepared and served within the stipulated time during service.
- Maintain cleanliness and hygiene of the work area, equipment, and utensils at all times.
- Follow HACCP, FSSAI, and hotel food safety standards and procedures.
- Ensure proper storage, labeling, and rotation of food items using FIFO methods.
- Monitor stock levels and inform senior chefs regarding requisition requirements.
- Minimize food wastage and assist in controlling food costs.
- Assist in receiving, checking, and storing kitchen supplies and inventory.
- Work closely with other kitchen staff to ensure smooth kitchen operations.
- Adhere to all company policies, safety regulations, and grooming standards.
Qualifications & Experience:
- Diploma or Degree in Hotel Management/Culinary Arts preferred.
- Minimum 2–4 years of experience in a Chinese kitchen in hotels or restaurants.
- Good knowledge of Chinese cuisine, ingredients, sauces, and cooking techniques.
- Ability to work flexible shifts, including weekends and holidays.
